This cashew nut chicken is a fragrant mixture of chicken, vegetables, sauce served with rice. More commonly known as chinese cashew chicken, this Thai recipe has Chinese origins.
To make this Thai Cashew Chicken, you will need :
- Soy sauce
- Oyster sauce
- Fresh garlic clove
- Fresh ginger
- Lime juice
- Tamarin paste (optional)
- Chili flakes (optional)
- Lemongrass powder (optional)
- Raw cashew nuts
- Chicken breast
- Medium onion
- Red bell pepper
- Green onion
- Olive oil
- Rice (to serve)
How to make this Thai Cashew Chicken step by step :
Step 1 – Mix all the sauce ingredients together and put aside. Step 2 – Heat a tablespoon of olive oil on medium heat in a wok. Step 3 – Add the cashew nuts and cook until golden brown. Step 4 – Remove the cashew nuts from the wok. Step 5 – Add the chicken and cook for 6 minutes. Step 6 – Remove the chicken from the wok. Step 7 – Add the onion and cook for 3 minutes. Step 8 – Add the red bell pepper and cook for 10 minutes. Step 9 – Pour the sauce into the wok and cook for 2 minutes. Step 10 – Add the chicken and the cashew nuts and cook for 2 minutes. Step 11 – Add the green onion and cook for 3 minutes. Step 12 – Serve with rice.

- Rice (to serve)
Instructions
- Mix all the sauce ingredients together and put aside.
- Heat a tablespoon of olive oil on medium heat in a wok.
- Add the cashew nuts and cook until golden brown.
- Remove the cashew nuts from the wok.
- Add the chicken and cook for 6 minutes.
- Remove the chicken from the wok.
- Add the onion and cook for 3 minutes.
- Add the red bell pepper and cook for 10 minutes.
- Pour the sauce into the wok and cook for 2 minutes.
- Add the chicken and the cashew nuts and cook for 2 minutes.
- Add the green onion and cook for 3 minutes.
- Serve with rice.
