What is Thai Cashew Chicken?

This cashew nut chicken is a fragrant mixture of chicken, vegetables, sauce served with rice. More commonly known as chinese cashew chicken, this Thai recipe has Chinese origins.

To make this Thai Cashew Chicken, you will need :

  • Soy sauce
  • Oyster sauce
  • Fresh garlic clove
  • Fresh ginger
  • Lime juice
  • Tamarin paste (optional) 
  • Chili flakes (optional) 
  • Lemongrass powder (optional) 
  • Raw cashew nuts
  • Chicken breast
  • Medium onion
  • Red bell pepper 
  • Green onion
  • Olive oil
  • Rice (to serve)

How to make this Thai Cashew Chicken step by step : 

Step 1 – Mix all the sauce ingredients together and put aside. Step 2 – Heat a tablespoon of olive oil on medium heat in a wok.  Step 3 – Add the cashew nuts and cook until golden brown. Step 4 – Remove the cashew nuts from the wok. Step 5 – Add the chicken and cook for 6 minutes. Step 6 – Remove the chicken from the wok. Step 7 – Add the onion and cook for 3 minutes. Step 8 – Add the red bell pepper and cook for 10 minutes. Step 9 – Pour the sauce into the wok and cook for 2 minutes. Step 10 – Add the chicken and the cashew nuts and cook for 2 minutes. Step 11 – Add the green onion and cook for 3 minutes. Step 12 – Serve with rice.

Tips to make this Thai Cashew Chicken :

  • Use fresh, organic ingredients for best results.
  • If you don’t have olive oil, you can use another cooking oil, but we recommend olive oil for best results.

Make this Thai Cashew Chicken your own :

  • Add noodles to make thai cashew chicken noodles.
  • Add your desired amount of spicy pepper it’s delicious spicy or mild.
  • Make a tofu curry by swapping out chicken for tofu or even mushrooms.
  • Swap out chicken for beef if you’d like a meatier version of this recipe.
  • Serve with brown rice rather than white for a slightly healthier and easier to digest version of the recipe.

Is Thai Cashew Chicken healthy?

This version of chicken in cashew nut sauce is much healthier than takeout. The combination of nuts, vegetables, lean protein (chicken) and rice make for a complete and delicious, balanced meal!

Ingredients

For the sauce :

  • 2 tbsp of soy sauce
  • 1 tbsp of soy sauce
  • 1 tbsp of oyster sauce
  • 1 clove of garlic (chopped)
  • 1 inch of fresh ginger (grated)
  • 1 tbsp of lime juice
  • 1 tbsp of water
  • 1 tbsp of tamarin paste (optional)
  • 1/2 tsp of child flakes (optional)
  • 1/2 tsp of lemongrass powder (optional)

For the chicken :

  • 1/3 cup of raw cashew nuts
  • 1/2 lb of chicken breast (cubed)
  • 1 medium onion (chopped)
  • 1/2 red bell pepper (sliced)
  • 1 green onion (chopped)
  • Olive oil
  • Rice (to serve)

Instructions

  1. Mix all the sauce ingredients together and put aside.
  2. Heat a tablespoon of olive oil on medium heat in a wok.
  3. Add the cashew nuts and cook until golden brown.
  4. Remove the cashew nuts from the wok.
  5. Add the chicken and cook for 6 minutes.
  6. Remove the chicken from the wok.
  7. Add the onion and cook for 3 minutes.
  8. Add the red bell pepper and cook for 10 minutes.
  9. Pour the sauce into the wok and cook for 2 minutes.
  10. Add the chicken and the cashew nuts and cook for 2 minutes.
  11. Add the green onion and cook for 3 minutes.
  12. Serve with rice.
