What is Provencal Chicken?

Provencal Chicken is an authentic chicken dish from the Provencal region of France, in Southeastern France, made with cherry tomatoes, red pepper, onions and black olives.

This chicken recipe combines typical ingredients found in the traditional cooking of the Provencal region of France.

Authentic Provencal cuisine is composed of simple dishes that use real, whole, simple ingredients. Provencal dishes are colorful and fragrant and often have tomatoes, olives, other veggies, chicken or fish in them. Dishes are typically served family style.

Some of our favorite Provencal dishes? Ratatouille, aioli, tapenade, bouillabaisse, tellines, salad Nicoise, boeuf à la Gordienne (the Southern version of Boeuf Bourguignon), Loup de Mer, Artichauts à la Barigoule and Gardiane d’Agneau.

To make this Provencal Chicken, you will need :

  • Chicken breasts
  • Medium onion
  • Fresh garlic
  • Red bell pepper
  • Zucchini
  • Cherry tomatoes
  • Black olives
  • Vegetable stock 
  • Thyme
  • Sea salt, ground black pepper
  • Olive oil

This recipe calls for Herbes de Provence; a staple in our home. I think they are a staple in most French kitchens. Herbes de Provence are a combination of delicious herbs : basil, fennel, marjoram, parsley, rosemary, tarragon, and thyme. We sprinkle them over ratatouille pizza, pasta, fish, meat and more. We always buy ours at the flower market, next to Notre Dame where they are sold in small burlap sacks tied with a ribbon. Definitely pick up a pack if you travel to Paris. You can also make your own Herbes de Provence at home.

Tips to make this Chicken Provencal recipe :

  • Don’t skip browning the chicken meat! It gives the dish so much flavor.

How to make this Provencal Chicken Step by Step :

Step 1 – Heat a tablespoon of olive oil on medium heat in a casserole. Step 2 – Add the chicken, a pinch of salt and cook until golden brown, about 3 minutes on each side. Step 3 – Remove from the casserole and set aside. Step 4 – Add the onion and a pinch of salt and cook for 5 minutes. Step 5 – Add the garlic and cook for 2 minutes. Step 6 – Add the red bell pepper and cook for 8 minutes. Step 7 – Remove from the casserole and put aside with the chicken. Step 8 – Add a tablespoon of olive oil, the zucchini, a pinch of salt and cook until golden brown. Step 9 – Remove from the casserole and put aside with the chicken preparation. Step 10 – Add the tomatoes and cook for 3 minutes. Step 11 – Put the chicken, onion, garlic, red bell pepper, zucchini and vegetable stock back in the casserole, add the olives and thyme and sprinkle with black pepper. Cook for 15 minutes on low heat.

Description

Ingredients

Scale
  • 2 chicken breasts
  • 1 onion (chopped)
  • 1 clove of garlic (chopped)
  • 1 red bell pepper (sliced)
  • 1 zucchini (sliced)
  • 6 cherry tomatoes (cut in half)
  • 10 black olives
  • 1/2 cup of vegetable stock
  • 1/2 tsp of dried thyme
  • Sea salt and ground black pepper
  • Olive oil

Instructions

  1. Heat a tablespoon of olive oil on medium heat in a casserole.
  2. Add the chicken, a pinch of salt and cook until golden brown, about 3 minutes on each side.
  3. Remove from the casserole and set aside.
