Ever since we visited Cambodia during our honeymoon, we have been completely and utterly in love with Cambodian cuisine (also known as Khmer cuisine). Khmer cuisine is a gorgeous combination of flavors, textures and temperatures, often including pickled vegetables, edible flowers, a variety of condiments, herbs and leaves, topped with lush dipping sauces. Description

Cambodian lemongrass ginger chicken stir fry filled with chicken, lemongrass, fresh ginger, lemon juice, lime juice, fresh cilantro, red chili & garlic!


Ingredients

Scale
  • 2 chicken breasts
  • 1/2 stick of fresh lemongrass (finely sliced)
  • 1 inch of fresh ginger (grated)
  • 1 lemon (zest & juice)
  • 2 limes (juice)
  • A handful of fresh cilantro (chopped)
  • 1/2 fresh red chili (sliced)
  • 1 garlic clove (finely chopped)
  • Olive oil
  • Salt and black pepper to taste
  • 1 tbsp of cashew nuts (crushed)

Instructions

To prepare the marinade

  1. Cut the chicken breasts into cubes. Put into a large bowl.
  2. Add the lemongrass.
  3. Zest the lemon and add the juice of the lemon into the bowl.
  4. Add the lime juice.
  5. Add the ginger, cilantro, red chili and garlic.
  6. Mix, cover and refrigerate for 30 minutes to marinate (or even overnight if you have time, for extra flavor).

To prepare the stir fry

  1. Heat olive oil in a large frying pan on medium heat.
  2. Pour the chicken and marinade into the frying pan.
  3. Add salt and ground black pepper to taste.
  4. Cook for 8 minutes.
  5. Serve with rice, cashew nuts and half a lime.
