Learn to make this perfumed and delicious Indian Aloo Gobi recipe.


Ingredients

Scale
  • 1 tsp of paprika
  • 1 tsp of turmeric
  • 1/4 tsp of chili pepper
  • 3 pods of cardamom
  • 4 cloves
  • 1 tsp of cumin
  • 10 white peppercorns
  • 5 black peppercorns
  • 10 little potatoes
  • 1/2 cauliflower
  • 1 cup of tomato sauce
  • 1 onion ( chopped)
  • 2 cloves of garlic (minced)
  • 1/4 tsp of garlic powder
  • 1/4 cup of fresh coriander
  • Salt & black pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a casserole on low heat.
  2. Add the potatoes (leaving the skin on), sprinkle with salt and black pepper, and cook until they soften (approximately 30 minutes).
  3. Meanwhile, using a frying pan, heat the black and white pepper corns, the cardamom and the cloves, on medium heat, for 2 minutes.
  4. Remove from heat, put in a mortar and crush to create a powder of mixed spices.
  5. Mix together the paprika, turmeric, chili pepper, cumin, cloves, peppers and cardamom.
  6. Heat olive oil in a pan on medium heat.
  7. Add the onion and garlic and cook for 5 minutes.
  8. Add the spices and cook for another 2 minutes.
  9. Reduce the heat to low.
  10. Pour in the tomato sauce and cook for another 5 minutes.
  11. Put aside.
  12. Cut the cauliflower into florets.
  13. Heat 3 cups of water in a large pot.
  14. Add a tsp of salt.
  15. Add the cauliflower and cook for 2 minutes.
  16. Remove from heat and strain the cauliflower.
  17. Cut the potatoes in half.
  18. Heat 2 tablespoons of olive oil in a large pot on medium heat.
  19. Add the potatoes, cauliflower, spicy tomato sauce and the fresh coriander.
  20. Cook for 5 minutes before serving.
  21. Sprinkle with fresh (raw) coriander.
