Description

Patatas a la riojana are the perfect Spanish tapas or dinner recipe. Tasty potatoes and chorizo come together in this flavorful dish.


Ingredients

Scale
  • 2 tbsp of olive oil 
  • 1 small onion (peeled and chopped)
  • 2 garlic cloves (peeled and minced)
  • 7 ounces of chorizo (sliced into 1/4 inch slices)
  • 1/2 lbs of potatoes (peeled and cut into 1 inch bites)
  • 2 cups of water
  • 1/2 tsp of hot chili powder
  • 2 bay leaves
  • Salt and ground black pepper to taste

Instructions

  1. Heat the olive oil in a casserole on medium heat.
  2. Add the onion and cook for 2 minutes.
  3. Add the garlic and a pinch of salt and cook for 3 minutes.
  4. Add the chorizo and cook for 5 minutes.
  5. Add the potatoes and cook for 10 minutes.
  6. Add the water, hot chili, salt and bay leaves and reduce the heat to low heat after the first boiled. Cook for 20 minutes.
  7. Remove the potatoes and chorizo from the casserole.
  8. Turn the heat to high heat to make a coating sauce with the cooking water.
  9. Turn to low heat and put back the potatoes and chorizo and cook for 2 minutes.
  10. Season with salt and black pepper.
