Description
Patatas a la riojana are the perfect Spanish tapas or dinner recipe. Tasty potatoes and chorizo come together in this flavorful dish.
Ingredients

- 2 tbsp of olive oil
- 1 small onion (peeled and chopped)
- 2 garlic cloves (peeled and minced)
- 7 ounces of chorizo (sliced into 1/4 inch slices)
- 1/2 lbs of potatoes (peeled and cut into 1 inch bites)
- 2 cups of water
- 1/2 tsp of hot chili powder
- 2 bay leaves
- Salt and ground black pepper to taste
Instructions
- Heat the olive oil in a casserole on medium heat.
- Add the onion and cook for 2 minutes.
- Add the garlic and a pinch of salt and cook for 3 minutes.
- Add the chorizo and cook for 5 minutes.
- Add the potatoes and cook for 10 minutes.
- Add the water, hot chili, salt and bay leaves and reduce the heat to low heat after the first boiled. Cook for 20 minutes.
- Remove the potatoes and chorizo from the casserole.
- Turn the heat to high heat to make a coating sauce with the cooking water.
- Turn to low heat and put back the potatoes and chorizo and cook for 2 minutes.
- Season with salt and black pepper.
