I first tasted it several years ago when I was traveling through Spain and it is a meat with regularly incorporate into our dishes. You can find it in several grocery stores and specialty stores throughout Europe and the US and you can also order it online on Amazon.
How to make chorizo con patatas
- Step 1 – Heat the olive oil in a casserole on medium heat.
- Step 2 – Add the onion and cook for 2 minutes.
- Step 3 – Add the garlic and a pinch of salt and cook for 3 minutes.
- Step 4 – Add the chorizo and cook for 5 minutes.
- Step 5 – Add the potatoes and cook for 10 minutes.
- Step 6 – Add the water, hot chili, salt and bay leaves and reduce the heat to low heat after the first boiled. Cook for 20 minutes.
- Step 7 – Remove the potatoes and chorizo from the casserole.
- Step 8 – Turn the heat to high heat to make a coating sauce with the cooking water.
- Step 9 – Turn to low heat and put back the potatoes and chorizo and cook for 2 minutes.
- Step 10 – Season with salt and black pepper.
Tips to make patatas riojana
- Choose a firmed chorizo for this recipe. A firmer chorizo is typically better quality and will also hold together better for this recipe.
