What are patatas a la riojana?

Patatas a la Riojana is a delicious potato, chorizo and caramelized onions simmered in pimentón (sweet paprika) from La Rioja, Spain.

What is patatas a la riojana in English?

The name of this recipe literally translates to “potatoes from La Rioja” or “Rioja-style potatoes”. La Rioja is an autonomous community and province in Spain in the North of the Iberian Peninsula.

What is chorizo?

Chorizo is a kind of pork sausage that is fermented, cured and smoked, commonly found in Europe. I first tasted it several years ago when I was traveling through Spain and it is a meat with regularly incorporate into our dishes. You can find it in several grocery stores and specialty stores throughout Europe and the US and you can also order it online on Amazon.

How to make chorizo con patatas

  • Step 1 – Heat the olive oil in a casserole on medium heat.
  • Step 2 – Add the onion and cook for 2 minutes.
  • Step 3 – Add the garlic and a pinch of salt and cook for 3 minutes.
  • Step 4 – Add the chorizo and cook for 5 minutes.
  • Step 5 – Add the potatoes and cook for 10 minutes.
  • Step 6 – Add the water, hot chili, salt and bay leaves and reduce the heat to low heat after the first boiled. Cook for 20 minutes.
  • Step 7 – Remove the potatoes and chorizo from the casserole.
  • Step 8 – Turn the heat to high heat to make a coating sauce with the cooking water.
  • Step 9 – Turn to low heat and put back the potatoes and chorizo and cook for 2 minutes.
  • Step 10 – Season with salt and black pepper.

Tips to make patatas riojana

  • Choose a firmed chorizo for this recipe. A firmer chorizo is typically better quality and will also hold together better for this recipe.

How to serve

This dish is absolutely perfect on its own, however you can also serve it with a selection of tapas or a variety of dishes. Some ideas?

  • A selection of tapas such as Patatas Bravas, Albondigas (smoky Spanish meatballs), Ham Croquetas and Catalan Chickpeas and Spinach.
  • White or brown rice
  • Pasta

Description

Patatas a la riojana are the perfect Spanish tapas or dinner recipe. Tasty potatoes and chorizo come together in this flavorful dish.


Ingredients

Scale
  • 2 tbsp of olive oil 
  • 1 small onion (peeled and chopped)
  • 2 garlic cloves (peeled and minced)
  • 7 ounces of chorizo (sliced into 1/4 inch slices)
  • 1/2 lbs of potatoes (peeled and cut into 1 inch bites)
  • 2 cups of water
  • 1/2 tsp of hot chili powder
  • 2 bay leaves
  • Salt and ground black pepper to taste

Instructions

  1. Heat the olive oil in a casserole on medium heat.
  2. Add the onion and cook for 2 minutes.
  3. Add the garlic and a pinch of salt and cook for 3 minutes.
  4. Add the chorizo and cook for 5 minutes.
  5. Add the potatoes and cook for 10 minutes.
  6. Add the water, hot chili, salt and bay leaves and reduce the heat to low heat after the first boiled. Cook for 20 minutes.
