Ingredients

- 1 cup of lentils
- 3 red beets (cut into ½ inch cubes)
- 100g of fresh goat cheese
- ½ yellow onion (finely sliced)
- 3 tomatoes (cut into 8 parts)
- 2 pickled spicy red peppers (finely chopped)
- Herbs de Provence
- 1 bay leaf
- 1 sprig of rosemary
- Vinaigrette
- Salt and black pepper
Instructions
- Wash the lentils.
- Pour the lentils and 2 liters of water in a pan.
- Heat on high heat.
- Turn the heat to low heat when the water is boiling and add salt, black pepper, the bay leaf and the rosemary.
- Continue to heat until the lentils become al dente! (Between 50 minutes and 1 hour).
- Drain the lentils and put aside until the lentils are room temperature.
- In a bowl, mix together lentils, onion, tomatoes, red beets, goat cheese, vinaigrette, Herbes de Provence; spicy red peppers, salt and pepper.
