Healthy easy lentil salad with beets and goat cheese

Healthy lentil salad. We love you. This salad makes us feel all the feels.

Lentils + beets + goat cheese = a winning combination that is healthy, delicious, easy to put together and will give you lots of energy. We created this lentil salad for lunch and it has become my favorite go-to salad for busy work days.

As those of you who follow this blog know, we are crazy about Indian food. We love making (and eating!) naan bread filled with gooey cheese, all kinds of Indian spices and sauces, Palak Paneer (spinach and cheese curry) and dahl. We wanted to learn to make Indian dahl which inspired us to learn to cook lentils. Read about the Indian area of Paris and our adventures shopping for Indian spices and goods.

Once we made dahl a few (ok several) times, we were hooked! We could.not.get.enough! We started creating all kinds of lentil recipes. Our latest lentil creation is this Summer lentil salad bursting with beets and goat cheese. The combination of the 3 ingredients is really beautiful.

Lentils are rich in iron which we also appreciate because we eat a lot of vegetables and quite a limited amount of meat. Lentils are a great alternative food to get a healthy dose of iron. Those of you following vegan or vegetarian diets, will also appreciate this hit of iron that will make you feel like superman/woman. 😉

We use quality, organic ingredients which gives this salad so much more scrumptious flavor. You can just prepare a big batch of lentils, mix all the ingredients together, cover and put in the fridge, and you have your next 2-3 works lunches ready. #badass

An added bonus, is that this Summer lentil salad packs up so easily which makes it great picnic food! We had lots of fun picnics this Summer and this was one of our go-to staples. It’s so easy to put in a bento box or a little lunch box. We typically use our favorite picnic basket (it came with real, mini wine glasses which is basically what won us over!) and bento boxes to carry our food with us.

Paris is such a great city for a picnic! Our favorite spot is on the Ile Saint Louis where there is a particularly gorgeous weeping willow tree and a Parisian “place” that holds a very special place in our hearts because we took some of our engagement and wedding photos there.

Ingredients

Scale
  • 1 cup of lentils
  • 3 red beets (cut into ½ inch cubes)
  • 100g of fresh goat cheese
  • ½ yellow onion (finely sliced)
  • 3 tomatoes (cut into 8 parts)
  • 2 pickled spicy red peppers (finely chopped)
  • Herbs de Provence
  • 1 bay leaf
  • 1 sprig of rosemary
  • Vinaigrette
  • Salt and black pepper

Instructions

  1. Wash the lentils.
  2. Pour the lentils and 2 liters of water in a pan.
  3. Heat on high heat.
  4. Turn the heat to low heat when the water is boiling and add salt, black pepper, the bay leaf and the rosemary.
  5. Continue to heat until the lentils become al dente! (Between 50 minutes and 1 hour).
  6. Drain the lentils and put aside until the lentils are room temperature.
  7. In a bowl, mix together lentils, onion, tomatoes, red beets, goat cheese, vinaigrette, Herbes de Provence; spicy red peppers, salt and pepper.
  • Prep Time: 20 mins
  • Cook Time: 1 hour

    This looks delicious – I love your dark and brooding photo at the top. It is just the sort of salad I would love on a picnic. Am interested in which lentils you use. I usually use red lentils for dahl and brown or puy lentils for salads. Is this the same with you.

    As a massive lentil fan, I would love this salad. The beetroot gives it such a gorgeous colour. Sadly CT dislikes beetroot, so I ten to make it into chutney or relish to eat with sandwiches etc.
