Kaffir lime merinues


Ingredients

Scale
  • 2 egg whites
  • 55g of caster sugar
  • 55g of powdered sugar
  • 1 pinch of salt
  • 1 pinch of powdered kaffir lime or grated fresh kaffir lime

Instructions

  1. Preheat your oven to 100°C (212°F).
  2. Pour the egg whites, salt and kaffir lime into your Kitchen Aid’s bowl and mix slowly, then increase the speed every 30 seconds.
  3. When the mixture looks like a cloud and forms peaks, increase to maximum speed and add the caster sugar in 3 parts. Wait 5 seconds between adding each part.
  4. Add the powdered sugar in 3 parts. Wait 5 seconds between each part.
  5. Whisk for another minute and stop.
  6. Put the mixture in a pastry pouch.
  7. Pipe the meringue out onto the prepared baking sheet using a large round tip.
  8. Put in the oven for 1 hour.
  9. Turn off the oven and leave the meringue to sit for another 20 minutes.
