Kaffir limes used to make kaffir lime meringues… Mmm. There is something about French meringues that is so decadent, so luxurious, so purely pleasurable. When you add a touch of kaffir lime to the mix, the result is pure Heaven. Make sure you check out our French cookies too.
I love the name kaffir lime. Just saying it makes me giddy with excitement as I think about our trip through Myanmar, Cambodia and Thailand. These gorgeous limes are all over Southeast Asia. They are so fragrant, they perfume the air and the streets. Back at home in Paris, we are immediately transported back to Asia as we cut through a kaffir lime.
At the moment, we are creating some very exciting content for you! The next couple of weeks will be dedicated to our sailing trip to the South of France, Cinque Terre (Italy) and Corsica! We literally took 6,000 photos during our month long trip and we are delighted to be sorting through them and recalling our most precious memories! September on our blog will be all about this beautiful, life-changing journey during which we fell in love with these 3 countries, in particular Myanmar, which remains as it was in the 70s and has been practically untouched and unseen my tourists. It is an incredible place!

Which brings me back to Kaffir limes and our kaffir lime meringues…
Can you find kaffir limes where you live? I hope so! They are pretty widely distributed around the globe. We have easy access to them in Paris although they can sometimes be a touch pricely, particularly since we buy everything organic which can be more expensive. It is worth it to splurge for the kaffir limes though, they really add something very specific to everything they touch.
What can you make with kaffir limes? Ahh, the possibilities are endless! 🙂 You can squeeze one in your Perrier for a decadent little water break or add them to any dessert that calls for lime or lemon. Their exotic flavor makes everything taste better.
We made these delightful kaffir lime meringues as part of another dessert (which we will be sharing with you shortly!) but they are also delicious on their own or with a cup of coffee or tea. They are sweet, but not too sweet and crunchy with a tender center. In France, you often see children leaving school eating a giant crunchy meringue as a mid-afternoon “goûter” (snack). These kaffir lime meringues are sure to win the hearts of your little ones too.

- Total Time: 1 hour 30 mins
- Yield: 10 small meringues 1x
Description
Kaffir lime merinues
Ingredients
- 2 egg whites
- 55g of caster sugar
- 55g of powdered sugar
- 1 pinch of salt
- 1 pinch of powdered kaffir lime or grated fresh kaffir lime
Instructions
- Preheat your oven to 100°C (212°F).
- Pour the egg whites, salt and kaffir lime into your Kitchen Aid’s bowl and mix slowly, then increase the speed every 30 seconds.
- When the mixture looks like a cloud and forms peaks, increase to maximum speed and add the caster sugar in 3 parts. Wait 5 seconds between adding each part.
- Add the powdered sugar in 3 parts. Wait 5 seconds between each part.
- Whisk for another minute and stop.
- Put the mixture in a pastry pouch.
- Pipe the meringue out onto the prepared baking sheet using a large round tip.
- Put in the oven for 1 hour.
- Turn off the oven and leave the meringue to sit for another 20 minutes.
- Prep Time: 10 mins
- Cook Time: 1 hour 20 mins
