We are slightly sweet potato obsessed in our home! We love using this versatile veggie to make all kinds of soups, quiches and more. The first few years I was living in France, sweet potatoes were pretty much non-existent here! Thank goodness they started popping up in our local markets because I seriously missed them. Hugo has now fallen in love with them too.
In addition to being delicious, sweet potatoes are a great source of vitamin C, manganese, potassium and vitamins B1 and B2.
Add your own twist to the sweet potato wedges
- Mix it up by using different spices – we also love cumin, cilantro, paprika, turmeric and curry.
- Switch out the sweet potato for another vegetable – we like turnips, carrots and parsnips. These are all delicious mixed as well.
- Top your sweet potato wedges with a generous helping of parmesan sweet potato wedges to make parmesan sweet potato fries.
