Description

Learn to make a French classic revisited – Galette des Rois tart with bursting with caramelized apples.


Ingredients

Scale
  • 3 apples (peeled and cut into 12 parts)
  • 1 puff pastry (we use this one)
  • 2 tbsp of Knobel honey
  • 2 tbsp of sugar
  • 1 tbsp of cream
  • 5g of butter
  • 1 egg yolk

Instructions

  1. Heat honey and sugar in a frying pan (or tart tatin pan) on medium heat.
  2. When the sugar and honey begin to caramelize, add the cream.
  3. Add the apples and butter and cook on low heat for 12 minutes.
  4. Increase the heat to medium and cook for 5 minutes until apples caramelize.
  5. Remove from heat and put aside until the apples cool to room temperature.
  6. Preheat oven into 390°F (200°C).
  7. Cut two 6 inch (15 cm) circles of dough.
  8. Put apples on the first circle, then cover with the second circle.
  9. Press the edges together to seal.
  10. Use a knife to create the design on the top of the tart.
  11. Brush with yolk.
  12. Put in the oven for 10 minutes then decrease the temperature to 340°F (170°C).
  13. Cook for 15-20 minutes until the galette tart turns golden brown.
  14. Serve warm or cold.
