Indian Broccoli Curry

Description

Indian style broccoli curry is a simple vegetarian dinner recipe that is both tasty and easy to make! Broccoli, peanuts, sesame seeds, onion, garlic, turmeric, tomato, yogurt, cilantro and olive oil come together to make this fragrant and delicious Indian curry.


Ingredients

  • 1 lbs of broccoli cut into florets
  • 1/4 cup of peanuts
  • 2 tbsp of sesame seeds
  • 1 little onion chopped
  • 2 cloves garlic chopped
  • 1 inch of ginger grated 
  • 1 tsp of turmeric 
  • 1 tomato chopped 
  • 1/2 cup of yogurt
  • Fresh cilantro
  • Olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat a large pot of water with a teaspoon of coarse salt.
  2. When the water begins to boil (you can see bubbles), add the broccoli and cook for 2 minutes. Remove from the water.
  3. Heat a tablespoon of olive oil in a casserole or a wok over medium heat.
  4. Add the peanuts and cook for 2 minutes.
  5. Add the sesame seeds and cook for another minutes.
  6. Add the onion and cook for 2 minutes.
  7. Add half a teaspoon of salt, garlic and ginger and cook for a minute.
  8. Add the turmeric, the tomato, the yogurt and stir for a minute.
  9. Turn the heat to low heat.
  10. Add the broccoli, black pepper and cook for 7 minutes.
  11. Serve with fresh cilantro on top.
