- 1 onion (chopped)
- 2 garlic cloves (crushed)
- 1 inch of fresh ginger (grated)
- 1 tbsp of garam masala
- 1 tsp of ground coriander seeds
- 1 tsp of paprika
- 1 tsp of turmeric
- 1 pinch of cayenne pepper
- 1/2 cauliflower (cut into florets)
- 2 carrots (peeled and cut into 4 parts)
- 1/2 lbs sweet potato (peeled and diced)
- 1/2 can of tomato sauce
- 1 can of peas
- 1/2 can of coconut cream
- 2 tbsp of cilantro
- Sea salt
- Ground black pepper
- Olive oil
Instructions
- Heat 2 tablespoons of olive oil on medium heat.
- Add the onion and cook for 3 minutes.
- Add the garlic and ginger and cook for 2 minutes.
- Add the spices, a pinch of salt and cook for 2 minutes.
- Add the cauliflower, carrots and sweet potatoes and cook for 2 minutes.
- Add the tomato sauce and cook on low heat for 25 minutes.
- Add the peas and the coconut cream and cook for 10 minutes on medium heat to reduce the sauce.
- Sprinkle with cilantro and serve over rice wth naan on the side.
