We absolutely fell in love with tiropita during our recent trip to Athens when we went on an Athens food tour. For our first stop, our food tour guide, Thalia, took us to try Greek cheese pie. This traditional Greek recipe blew us away immediately. It is cheesy, just salty enough, flaky and delicious. We had to know how to make it so that we could enjoy the incredible flavor again and again at home.

Can your freeze tiropita?
Yes, you can freeze the cheese pie. If you are planning to freeze, don’t bake first. Cover the entire cheese pie with plastic wrap and freeze. When you want to prepare the cheese pie, take it out of the freezer and remove the plastic wrap. Move the tiropita to a baking tray, cover with aluminum foil, and bake for 35 minutes. Remove the foil and bake for another 15-25 minutes.
Tiropita vs spanakopita – what is the difference?
Tiropita is a classic Greek cheese pie with a flaky phyllo pastry crust. Spanakopita is also a Greek pie made with spinach and feta cheese.

Description
Tiropita is the perfect Greek recipe to enjoy as an appetizer or for lunch or dinner. This International recipe is easy to make and absolutely delicious!
Ingredients
1/2 lbs of feta cheese
1/2 cup of grated emmental (or Swiss) cheese
2 eggs
4 leaves of mint (minced)
1/4 tsp of black pepper ground
5 phyllo pastry (10in*15in)
4 tbsp of olive oil
Instructions
Preheat oven to 350°F (175°C).
Smash the feta cheese with a fork.
Add the emmental, eggs, mint and black pepper and mix to incorporate.
Brush olive oil on half of the phyllo pastry and fold in half.
Repeat to form a rectangle (a slight rectangle, almost a square) of phyllo.
Brush olive oil and place face down on a parchment paper.
Repeat with a second sheet of phyllo pastry.
Place the second phyllo sheet on top of the first one.
Place in a stainless steel mold 5 inch (12cm) square bottomless.
Fill with the feta mix.
Brush olive oil over each phyllo sheet.
Stack the phyllo sheets, one by one, over the feta mix.
Be careful to fold each sheet under the phyllo base.
Bake for 40 minutes.
Remove from the oven.
Leave to cool for 5 minutes.
Cut into 4 squares and serve.
