Tiramisu all fragole translates from the Italian to strawberry tiramisu. It has all of the deliciousness of a classic tiramisu with the added bonus of fresh strawberries. It is made with eggs, sugar, mascarpone, fresh strawberries, ladyfinger biscuits, espresso and a sprig of fresh mint.

How to make tiramisu alle fragole step by step
Prepare the tiramisu cream
Step 1 – Separate egg yolks and egg whites.
Step 2 – Mix the egg yolks with the sugar in the bow of your stand alone mixer with the paddle attachment on high speed for 5 minutes, or until it turns white and creamy.
Step 3 – Add in the mascarpone and mix for 2 another minutes.
Step 4 – Meanwhile, mix the egg whites with a pinch of salt until stiff peaks form.
Step 5 – Gently fold the egg whites into the initial mixture.
Bring it all together
Step 6 – Dip the ladyfinger biscuits into the espresso.
Step 7 – Put a teaspoon of the tiramisu cream in the bottom of each bowl or shot glass.
Step 8 – Add the fresh strawberries, cut into slices.
Step 9 – Add pieces of ladyfingers on top of the tiramisu cream.
Step 10 – Top the ladyfinger biscuits with a teaspoon of the tiramisu cream.
Step 11 – Add fresh strawberries cut into small pieces.
Step 12 – Repeat the process with a layer of the tiramisu cream, a layer of ladyfingers, and a layer of the tiramisu cream.
Step 13 – Cover with plastic wrap and refrigerate for 6h or overnight.
Step 14 – Remove from the fridge and top each tiramisu with a strawberry and a mint leaf.

- Use a high quality freshly brewed espresso for the best flavour results.
- Avoid preparing a runny tiramisu by leaving the mixture to set for a minimum of 4 hours and even overnight.
- Choose fresh strawberries with lots of flavor. We love using fraises des bois (wild strawberries), fraises gariguette (local French strawberries from the Vaucluse region of France). Use your favorite local strawberries for this recipe.
