Description

Learn to make these delicious Thai zoodles.


Ingredients

Scale
  • 1 red bell pepper
  • 2 spring onions
  • 1 inch of fresh ginger (finely chopped)
  • 1 clove of garlic (finely chopped)
  • 2 tsp toasted sesame oil
  • 1 tsp sugar
  • 2 tbsp soy sauce
  • 1/2 red chili pepper (finely chopped)
  • 2 yellow zucchini
  • 1 green zucchini
  • 6 cherry tomatoes (cut into halves)
  • 1/2 cup of fresh parsley (roughly chopped)
  • 1/4 cup of cashew nuts (crushed)
  • 4 tbsp of olive oil
  • Black pepper to taste
  • 1 lime

Instructions

  1. Slice the red peppers lengthwise into thin slices.
  2. Cut off the bulbs (the white part) of each scallion and slice. (Keep the green stalks aside for later. )
  3. In a large frying pan, heat the olive oil on medium heat.
  4. Add the red pepper. Cook for 5 minutes. Keep stirring!
  5. Add the chopped scallions (only the bulbs).
  6. Add the ginger. Keep stirring!
  7. Reduce heat to low heat.
  8. Cook for 2 minutes.
  9. In the meantime, mix the garlic, sesame oil, sugar, soy sauce and chili pepper together in a bowl.
  10. Pour the mixture into the frying pan.
  11. Keep cooking for another 5 minutes.
  12. Meanwhile, spiralize the zucchini.
  13. Pour the contents of the frying pan into a bowl.
  14. Cook the green scallion stalks in the frying pan for 2 minutes on medium heat.
  15. Put the zoodles in the frying pan. Mix for 30 seconds.
  16. Pour the mixture you put aside earlier in the bowl back into the frying pan.
  17. Cook everything together for another 30 seconds.
  18. Turn off the heat.
  19. Serve in 2 bowls.
  20. Season with the tomatoes, parsley, cashew nuts, black pepper and lime.
