Description

This veg sweet potato pizza is the perfect easy dinner recipe! Dripping with buffala mozzarella, ricotta, red onions and sweet potato and topped with delicious arugula!


Ingredients

Units Scale
  • 1 medium sweet potato of 1 lb (peeled and cubed)
  • 1 organic pre-made pizza dough
  • 1 cup of ricotta cheese
  • 1 ball of fresh buffala mozzarella (cut into large slices)
  • 1 small red onion (sliced)
  • 1 tsp of hot chili powder
  • Salt and ground black pepper to taste
  • Olive oil
  • Arugula (to serve)

Instructions

  1. Heat olive oil in a frying pan on low-medium heat.
  2. Add the sweet potato cubes, a pinch of salt, ground black pepper and a half teaspoon of hot chili powder and cook for 20 minutes. Put aside.
  3. Preheat oven to 530°F (275°C).
  4. Unroll the pizza dough on the backing tray.
  5. Mix ricotta cheese with a pinch of salt and the rest of the hot chili powder.
  6. Spread the ricotta cheese over the pizza dough.
  7. Sprinkle a half teaspoon of ground black pepper over the ricotta.
  8. Add the sweet potato cubes.
  9. Top the sweet potatoes with the mozzarella.
  10. Next, add the red onion.
  11. Bake in the oven until the dough is well cooked (5 and 10 minutes).
  12. Remove from oven and top with arugula to serve.
