Description
This veg sweet potato pizza is the perfect easy dinner recipe! Dripping with buffala mozzarella, ricotta, red onions and sweet potato and topped with delicious arugula!

- 1 medium sweet potato of 1 lb (peeled and cubed)
- 1 organic pre-made pizza dough
- 1 cup of ricotta cheese
- 1 ball of fresh buffala mozzarella (cut into large slices)
- 1 small red onion (sliced)
- 1 tsp of hot chili powder
- Salt and ground black pepper to taste
- Olive oil
- Arugula (to serve)
Instructions
- Heat olive oil in a frying pan on low-medium heat.
- Add the sweet potato cubes, a pinch of salt, ground black pepper and a half teaspoon of hot chili powder and cook for 20 minutes. Put aside.
- Preheat oven to 530°F (275°C).
- Unroll the pizza dough on the backing tray.
- Mix ricotta cheese with a pinch of salt and the rest of the hot chili powder.
- Spread the ricotta cheese over the pizza dough.
- Sprinkle a half teaspoon of ground black pepper over the ricotta.
- Add the sweet potato cubes.
- Top the sweet potatoes with the mozzarella.
- Next, add the red onion.
- Bake in the oven until the dough is well cooked (5 and 10 minutes).
- Remove from oven and top with arugula to serve.
