Schaum Torte is the Austrian equivalent of an Australian Pavlova. It’s made with baked meringue and topped with gorgeous fruits. The Austrian equivalent of an Australian pavlova. The Schaum Torte is a dessert made with baked meringue, whipped cream and topped with fruits. It’s typically served as a special occasion tart. It makes for a wonderful birthday cake too. This mini version is great for a group.
Where did schaum torte originate?
Schaum Torte is an Austrian dessert.
To make schaum torte you will need :
- Eggs
- White vinegar
- Castor sugar
- Cream of tartar
- Vanilla extract
- Liquid cream
- Powdered sugar
- Mirabelle plums (or your favorite fruit)
How to make schaum torte
Prepare the meringue
- Step 1 – Preheat the oven to 350°F (180°C).
- Step 2 – Pour the egg whites and vinegar into the bowl of your stand mixer and mix with the whisk on high speed until soft peaks form, about 4-5 minutes.
- Step 3 – Add the sugar, little by little, while mixing on high speed until the mixture forms stiff peaks, about 2 minutes.
- Step 4 – Add the cream of tartar and vanilla extract and mix for a minute.
- Step 5 – Spread the meringue on a baking sheet, creating 8 circles (2 1/2 inches each) with the sides higher than the middle, like 8 little nests.
- Step 6 – Put in the oven and reduce the heat to 200°F (95°C).
- Step 7 – Bake for 1h30. Make sure not to open the oven while baking.
- Step 8 – Turn the oven off and leave it open ajar.
Make the whipped cream.
- Step 9 – Meanwhile, put the liquid cream in the freezer for 30 minutes.
- Step 10 – Pour the cream into the bowl of your stand mixer and mix with the whisk until it becomes fluffy (mix on medium speed for 2 minutes, then increase the speed every 30 seconds until you reach maximum speed).
- Step 11 – Add the powdered sugar little by little while mixing.
- Step 12 – Add the cream of tartar while mixing.
- Step 13 – Continue to mix until the cream is well whipped and you can turn the bowl upside down without the cream spilling out from the bowl.
- Step 14 – Refrigerate until the meringues are lukewarm.
Assemble
- Step 15 – Remove the meringues from the oven and the whipped cream from the fridge.
- Step 16 – Put the whipped cream in the center of each mini meringue.
- Step 17 – Cut the plums and remove the core.
- Step 18 – Add the plums on top of the Schaum torte.
Make this recipe your own
- Top with your favorite fruit. We made this schaum torte with mirabelle plums, but it would be delicious with mixed berries, kiwi, passion fruit or your fruit of choice.
- Make a coconut whipped cream. In place of a traditional chantilly, this would be delicious with a coconut whipped cream and fruit on top.
Tips to make schaum torte
- Make sure not to open the oven while baking.
- You will know your whipped cream is ready when you can turn the bowl upside down without the cream spilling out from the bowl.
