Description

Salmon meuniere, a new version of a French classic, is made with salmon butter and lemon. Served over rice, this is the perfect, fancy and decadent French dinner recipe.


Ingredients

Scale
  • 1/4 stick of butter
  • Juice of a lemon
  • 1 sprig of thyme (optional)
  • 1/2 lb of salmon
  • 1 tbsp of flour
  • 1 tbsp of butter
  • 3 lemon slices
  • Salt and pepper

Instructions

  1. Heat the 1/4 stick of butter in a sauce pan over low heat until it bubbles.
  2. Add the lemon juice and the sprig of thyme and cook for 2 minutes.
  3. Remove from heat and leave to infuse. (This will be the sauce.)
  4. Cover the salmon with flour.
  5. Heat the tbsp of butter over medium heat until it bubbles.
  6. Add the salmon, skin down, and cook for 3 minutes.
  7. Flip the salmon over.
  8. Pour the butter and lemon mixture over the salmon, add the slices of lemon and cook for 3 minutes, while continuously pouring spoonfuls of butter over the fish.
  9. Add salt and pepper to season.
