It is a classic French sole meuniere revisited with salmon instead of sole. The salmon is doused with flour and then pan fried in butter and lemon. It is decadent and delicious.
Meunière is a traditional French cooking method typically used to prepare sole. The fish is covered in flour and then pan fried in butter and lemon. It is quite frankly the most perfect fish preparation you could ever dream of and was actually Julia Child’s favorite dish to eat in Paris. She talks about in her book My Life in France. Here, we’ve swapped out sole for salmon. I love ordering it when we go out for dinner here in Paris and we often prepare it at home for a special date night or celebration like a birthday or anniversary. It’s my favorite fish dish!
When researching this dish online, we came across a dish we had never heard of called “salmon meuniere botw”. After a little investigation, and more Google searching, we discovered that “botw” refers to “Breath of the Wild” which is part of the 19th installment of the Legend of Zelda series. (Ok, so not something we know anything about!)

Salmon Meuniere ingredients
- Butter – use European style butter if you can. French butter has a bit more fat in it but it is worth the extra calories for the perfect flavor.
- Fresh lemon
- Fresh thyme (optional)
- Salmon filet – salmon is delicious, and it’s also packed with protein and Omega-3 fatty acids. Learn more about the nutritional value of salmon here.
- Flour – tossing the fish in flour creates a delightful crust on each side.
- Lemon slices (to garnish)
How to make Salmon Meuniere step by step
- Step 1 – Heat the 1/4 stick of butter in a sauce pan over low heat until it bubbles.
- Step 2 – Add the lemon juice and the sprig of thyme and cook for 2 minutes.
- Step 3 – Remove from heat and leave to infuse. (This will be the sauce.)
- Step 4 – Cover the salmon with flour.
- Step 5 – Heat the tbsp of butter over medium heat until it bubbles.
- Step 6 – Add the salmon, skin down, and cook for 3 minutes.
- Step 7 – Flip the salmon over.
- Step 8 – Pour the butter lemon mixture over the salmon, add the slices of lemon and cook for 3 more minutes, while continuously pouring spoonfuls of butter over the fish.
- Step 9 – Add salt and pepper to season.
What to serve with salmon meuniere
- Serve with rice. A white Basmati rice or a brown, whole grain rice works well.
- Serve with pasta. You could serve the fish with fresh tagliatelle.
- Serve with steamed vegetables. This fish dish is quite rich so steamed vegetables would balance out the delicious, creamy butter and lemon sauce quite nicely.
How to store and reheat salmon meuniere
- To store. It’s best to make this dish fresh, but if you want to store it, wait for it to cool and then store it in an airtight container for up to 2 days in the fridge.
- To reheat. Reheat on the stove in a frying pan. Remove the fish from the fridge, add some butter to a frying pan, and heat each side of the fish for about 5 minutes. Avoid reheating in the microwave for best results, and again, make it fresh if you can!
