- 1.5 lbs of spinach
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 1 shortcrust pastry
- 3 medium eggs
- 1/2 cup of liquid cream
- 1/2 cup of mascarpone cheese
- 1 cup of grated emmental
- Salt & black pepper to taste
- Oregano
- Olive oil
Instructions
- Wash the spinach and remove the stems.
- Heat a large pot of salted water until it boils.
- Put the spinach in the boiling water for 1 minute.
- Remove the spinach leaves from the boiling water and put it in them in the bowl of cold water to stop the cooking process.
- Squeeze the water out of the spinach with your hands and chop it into small pieces.
- Heat a tablespoon of olive oil in a frying pan.
- Add the onion and and a pinch of salt and cook for 5 minutes.
- Add the garlic and cook for one minute.
- Add a teaspoon of oregano, a pinch of black pepper and the spinach and cook for 5 minutes.
- Remove from the heat.
- Preheat oven to 400°F (210°C).
- Put the shortcrust pastry in a quiche pan.
- Make small holes in the pastry using a fork to keep the quiche from swelling as it cooks.
- Top with parchment paper and baking beans.
- Bake for 10 minutes.
- Meanwhile, whisk the eggs with liquid cream, mascarpone, a pinch of salt, a pinch of black pepper and a half teaspoon of oregano.
- Remove the shortcrust pastry from the oven.
- Remove the baking bean and the parchment paper.
- Put the spinach in the quiche crust.
- Pour in the eggs, cream and mascarpone and mix.
- Top with grated Emmental cheese.
- Bake for 20 minutes.
