Description

Make this easy French spinach and cheese Quiche Florentine with a handful of fresh and delicious ingredients. This is about to become your go-to, favourite quiche recipe!


Ingredients

Scale
  • 1.5 lbs of spinach
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 1 shortcrust pastry
  • 3 medium eggs
  • 1/2 cup of liquid cream
  • 1/2 cup of mascarpone cheese
  • 1 cup of grated emmental
  • Salt & black pepper to taste
  • Oregano
  • Olive oil 

Instructions

  1. Wash the spinach and remove the stems.
  2. Heat a large pot of salted water until it boils.
  3. Put the spinach in the boiling water for 1 minute.
  4. Remove the spinach leaves from the boiling water and put it in them in the bowl of cold water to stop the cooking process.
  5. Squeeze the water out of the spinach with your hands and chop it into small pieces.
  6. Heat a tablespoon of olive oil in a frying pan.
  7. Add the onion and and a pinch of salt and cook for 5 minutes.
  8. Add the garlic and cook for one minute.
  9. Add a teaspoon of oregano, a pinch of black pepper and the spinach and cook for 5 minutes.
  10. Remove from the heat.
  11. Preheat oven to 400°F (210°C).
  12. Put the shortcrust pastry in a quiche pan.
  13. Make small holes in the pastry using a fork to keep the quiche from swelling as it cooks.
  14. Top with parchment paper and baking beans.
  15. Bake for 10 minutes.
  16. Meanwhile, whisk the eggs with liquid cream, mascarpone, a pinch of salt, a pinch of black pepper and a half teaspoon of oregano.
  17. Remove the shortcrust pastry from the oven.
  18. Remove the baking bean and the parchment paper.
  19. Put the spinach in the quiche crust.
  20. Pour in the eggs, cream and mascarpone and mix.
  21. Top with grated Emmental cheese.
  22. Bake for 20 minutes.
