Quiche Florentine

Quiche Florentine, sometimes also called Florentine Quiche, is an easy and healthy quiche to make. It a French dish, with Italian inspiration and the perfect weeknight dinner. You’ll only need a handful of ingredients to make this easy quiche : shortcrust pastry for the crust, eggs, cream, fresh spinach, mascarpone and Emmental cheese (or your favourite cheese) for the filling. To make this Quiche Florentine recipe, you will need :

  • Fresh spinach 
  • Onion (chopped) 
  • Garlic cloves (minced) 
  • Shortcrust pastry
  • Eggs
  • Liquid cream
  • Mascarpone
  • Grated emmental 
  • Salt and ground black pepper
  • Oregano
  • Olive oil

Quiche is typically eaten for lunch for dinner in France but some people even love to eat cold quiche for breakfast. We’ve never tried it, but hey, it might be good!

Tips to make Quiche Florentine

  • Use fresh, whole leaf spinach – it provides more nutrition and will also avoid any grittiness that can come from using frozen or shredded spinach in the quiche.
  • Precooking the shortcrust pastry is key – do not toss everything in the quiche and bake. You will end up with a soggy, undercooked quiche crust.

Where does the name Quiche Florentine come from?

Here in France, and in French cooking, when you add spinach to a dish, it is called à la Florentine.

As the story goes, the name comes from Catherine de Médici, who was a French Queen born in Florence and married into the French throne. Apparently, when she moved to French she brought her own cooks with her from Florence. They brought spinach seeds. It seems the French didn’t have spinach before the 1500s! Isn’t that surprising?

As her cooks used the spinach to make a variety of dishes, spinach gained in popularity, became known as a vegetable, and began being using in French cooking.

Making Easy French Quiche

Quiche is easy to make and something we make when we don’t have a lot of time or feel like eating a simple and delicious meal.

Quiche is the perfect base. It is a very versatile recipe that you can adapt as you choose. You’ll need a shortbread pastry crust/pie crust.

How long should you bake the quiche?

Preheat oven to 400°F (210°C). Bake for 2O minutes and voilà!

How to tell when your quiche is done?

Your quiche should be sightly golden. The crust should be golden as well.

Can quiche be reheated the next day?

Yes! We regularly make a quiche, each eat a quarter of it, and save the second half for dinner the next day. It is delicious reheated.

How long will quiche last in the refrigerator?

The quiche is not likely to last long because it is so delicious, but if you do happen to have leftovers, I would recommend finishing it within 2-3 days.

What to serve quiche with

  • In France, quiche is typically served with salad on the side and French vinaigrette.
  • Serve with a side of perfect steamed asparagus.
  • Serve with a side of breaded mushrooms.
  • Serve vegetarian French onion soup on the side.

Description

Make this easy French spinach and cheese Quiche Florentine with a handful of fresh and delicious ingredients. This is about to become your go-to, favourite quiche recipe!


Ingredients

Scale
  • 1.5 lbs of spinach
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 1 shortcrust pastry
  • 3 medium eggs
  • 1/2 cup of liquid cream
  • 1/2 cup of mascarpone cheese
  • 1 cup of grated emmental
  • Salt & black pepper to taste
  • Oregano
  • Olive oil 

Instructions

  1. Wash the spinach and remove the stems.
  2. Heat a large pot of salted water until it boils.
  3. Put the spinach in the boiling water for 1 minute.
  4. Remove the spinach leaves from the boiling water and put it in them in the bowl of cold water to stop the cooking process.
  5. Squeeze the water out of the spinach with your hands and chop it into small pieces.
  6. Heat a tablespoon of olive oil in a frying pan.
  7. Add the onion and and a pinch of salt and cook for 5 minutes.
  8. Add the garlic and cook for one minute.
  9. Add a teaspoon of oregano, a pinch of black pepper and the spinach and cook for 5 minutes.
  10. Remove from the heat.
  11. Preheat oven to 400°F (210°C).
  12. Put the shortcrust pastry in a quiche pan.
  13. Make small holes in the pastry using a fork to keep the quiche from swelling as it cooks.
  14. Top with parchment paper and baking beans.
  15. Bake for 10 minutes.
  16. Meanwhile, whisk the eggs with liquid cream, mascarpone, a pinch of salt, a pinch of black pepper and a half teaspoon of oregano.
  17. Remove the shortcrust pastry from the oven.
  18. Remove the baking bean and the parchment paper.
  19. Put the spinach in the quiche crust.
  20. Pour in the eggs, cream and mascarpone and mix.
  21. Top with grated Emmental cheese.
  22. Bake for 20 minutes.
