Tips to make Quiche Florentine
- Use fresh, whole leaf spinach – it provides more nutrition and will also avoid any grittiness that can come from using frozen or shredded spinach in the quiche.
- Precooking the shortcrust pastry is key – do not toss everything in the quiche and bake. You will end up with a soggy, undercooked quiche crust.

Where does the name Quiche Florentine come from?
Here in France, and in French cooking, when you add spinach to a dish, it is called à la Florentine.
As the story goes, the name comes from Catherine de Médici, who was a French Queen born in Florence and married into the French throne. Apparently, when she moved to French she brought her own cooks with her from Florence. They brought spinach seeds. It seems the French didn’t have spinach before the 1500s! Isn’t that surprising?
As her cooks used the spinach to make a variety of dishes, spinach gained in popularity, became known as a vegetable, and began being using in French cooking.
