What are French meringue cookies?
There are different types of meringue cookies. These cookies are made with French meringue (using our easy meringue recipe) which creates a firm, slightly crunchy cookie on the outside, chewy on the inside. Sometimes these cookies are called French egg white cookies, meringue kisses, meringue puffs or meringue cloud cookies.
These cookies use French meringue! If you are wondering about the different types of meringue (French, Italian, Swiss), check out this post.

Tips to make easy meringue cookies
Making French meringues isn’t always easy. Here are a few tips to make sure that you succeed each time you set out to make these classic meringue cookies.
- Don’t overcook or your meringues will quickly go from prettily toasted to burned (and way too hard).
- Use a good quality stand mixer to really whip the eggs quickly. The key to successfully making French meringues is whipping the egg whites into peaks which is difficult to achieve without the proper equipment. (We use the classic red KitchenAid stand mixer for all baking preparations including this French meringue recipe.)
Add your own twist to these orange meringue cookies
- Skip the fleur d’oranger and make classic French meringues.
- Add a drizzle of chocolate sauce or raspberry coulis for a little extra flavor. You could also grate dark chocolate over the meringues too.
- Use coconut sugar rather than cane sugar to make this recipe a little bit healthier.
- Make French meringue cookies with a filling by adding a dollop of jam or chocolate inside the cookies.
- Turn these cookies into French meringue sandwich cookies by cutting the French meringues in half and adding a filling, such as jam, chocolate, caramel or your favorite filling.
You may need
- You will need a good quality stand mixer to create meringues. We use the classic red KitchenAid stand mixer in our home for pretty much all of our recipes and we love it! It is worth every penny and you will enjoy it for years to come. Every home cook needs one. (It’s also so pretty that it’s decorative in additional to being functional in the kitchen.)
- Every French home has beautiful Le Creuset spatulas. Ours are cherry red to go with our red KitchenAid and collection of Le Creuset iron cookware.
- You will also need fleur d’orange (orange blossom essential oil) for this recipe and we recommend you do too. The quality of the orange blossom you use for this recipe will make or break your recipe, so we definitely recommend getting the high quality ingredient.
