We still have at least a few weeks of cold weather in front of us, but with these teeny tiny pina colada cocktails you are sure to feel like you are sitting poolside or lying on the beach!

It snowed this past weekend and we went for a snowy and romantic walk through some of our favorite streets of Paris in Montmartre. We walked up the hill towards the Sacre Coeur. We crossed the Place du Tertre where artists sit and paint (even when it’s snowing!) and we passed the Dali Museum and the cabart of the Lapin Agile. We had a perfect snowy day in this city that we love so much!

We came home just in time for “apéro” – an evening drink with delicious little bites to eat. On a Saturday evening, we would typically have a glas or two of red wine but last weekend we were in the mood for a tropical cocktail!

Description

Learn to make these adorable and delicious, super easy mini Pina Colada Cocktails!


Ingredients

Scale
  • 1/4 cup of rum
  • 1/4 cup of dark rum
  • 1/2 cup of coconut milk
  • 3/4 cup of pineapple juice
  • 1/4 cup of diced pineapple
  • 1 tsp of hot chili peppers
  • 5 ice cubes
  • 1 tbsp of sugar to serve

Instructions

For the piña colada

  1. Pour the rum, the pineapple juice and the coconut milk into a shaker.
  2. Put the ice cubes into the shaker and shake.
  3. Sprinkle a half teaspoon of chili peppers over the diced pineapple and stir.
  4. Pour the piña colada into each glass, add spicy diced pineapple and add a pinch of chili pepper.

To serve

  1. Put the sugar on a plate.
  2. Dip the rim of each glass into the pineapple juice.
  3. Dip each glass in the sugar.
