Lemongrass Curry with Broccoli and Tofu

Lemongrass curry with broccoli and tofu! This lemongrass tofu recipe is simple to make and a perfect weeknight treat. Lemongrass, garlic, red onion, lemon juice, lime juice, soy sauce, brown sugar, tofu, fresh cilantro, red chili, broccoli and cashew nuts come together beautifully in this fragrant recipe, served over rice. If you love lemongrass, serve Thai coconut ice cream for dessert!

Lemongrass Curry with Broccoli and Tofu Ingredients

  • Lemongrass
  • Garlic
  • Red onion
  • Lemon juice
  • Lime juice
  • Soy sauce
  • Brown sugar
  • Tofu
  • Fresh cilantro
  • Red chili
  • Broccoli
  • Cashew nuts
  • Rice (to serve)

How to make Lemongrass Curry with Tofu and Broccoli

  • Step 1 – Blend the lemongrass, garlic, lemon juice, lime juice, soy sauce and brown sugar together.
  • Step 2 – Put into a large bowl.
  • Step 3 – Mix in the tofu.
  • Step 4 – Add the cilantro and red chili.
  • Step 5 – Refrigerate for 30 minutes to marinate.
  • Step 6 – Heat olive oil in a large frying pan on medium heat.
  • Step 7 – Add the onion and cook for 2 minutes.
  • Step 8 – Add the tofu and pour in the marinade.
  • Step 9 – Add ground black pepper.
  • Step 10 – Cook for 6 minutes.
  • Step 11 – Meanwhile, heat a large pot of water until it boils.
  • Step 12 – Add a teaspoon of coarse salt and the broccoli. 
  • Step 13 – Cook for a minute. 
  • Step 14 – Drain the broccoli.
  • Step 15 – Sprinkle with cashew nuts and serve with rice.

Description

Make this quick and easy delicious vegan lemongrass curry with broccoli and tofu for dinner tonight. (Added bonus – leftovers will make a tasty lunch for tomorrow too!)


Ingredients

Scale
  • 1/2 stick of fresh lemongrass (finely sliced)
  • 1 clove of garlic
  • 1 small red onion (sliced)
  • Juice of 1/2 a lemon
  • Juice of 1 lime
  • 2 tbsp of soy sauce
  • 1 tbsp of brown sugar
  • ½ lb of tofu (organic, GMO free please!)
  • A handful of fresh cilantro (chopped)
  • 1/2 fresh red chilis (sliced)
  • 1/2 broccoli (cut into florets)
  • Olive oil
  • Salt and black pepper
  • 1 tbsp of cashew nuts (crushed)
  • Rice to serve (we typically serve this dish with brown rice)

Instructions

  1. Blend the lemongrass, garlic, lemon juice, lime juice, soy sauce and brown sugar together.
  2. Put into a large bowl.
  3. Mix in the tofu.
  4. Add the cilantro and red chili.
  5. Refrigerate for 30 minutes to marinate.
  6. Heat olive oil in a large frying pan on medium heat.
  7. Add the onion and cook for 2 minutes.
  8. Add the tofu and pour in the marinade.
  9. Add ground black pepper.
  10. Cook for 6 minutes.
  11. Meanwhile, heat a large pot of water until it boils.
  12. Add a teaspoon of coarse salt and the broccoli. 
  13. Cook for a minute. 
  14. Drain the broccoli.
  15. Sprinkle with cashew nuts and serve with rice.
