Description

Learn to make this delicious + nutritious leek sweet potato soup.


Ingredients

Scale
  • 3 small leeks (washed and cut into 1 inch slices)
  • 1 medium sweet potato (peeled and cut into 1 inch cubes)
  • 1 onion (peeled and cut into 4 parts)
  • 2 garlic cloves (peeled and cut in half)
  • 1 bouillon cube
  • 1 liter of cold water
  • 1 tbsp of salt
  • 1 tsp of Ras El Hanout spice mix
  • 1/4 tsp of hot chili flakes
  • 1 tsp of pepper
  • 5cl of liquid cream
  • 2 tbsp of grated cheese (we used Emmental cheese, but you could grate your favorite cheese on top)

Instructions

  1. Put the leeks, sweet potato, onion and garlic in a large pot.
  2. Add the cold water.
  3. Add salt and bouillon cube and heat on medium heat for 1 hour.
  4. Mix with a hand mixer.
  5. Add pepper, ras el hanout and mix.
  6. Serve with hot chili flakes, cream and grated cheese.

Notes

– Use an immersion mixer to get the perfect texture. We love this Kitchen Aid immersion mixer for making smooth Winter soups.
– These Ras El Hanout spices add so much flavor to this healthy Winter soup!
