Description
Learn to make this delicious + nutritious leek sweet potato soup.
Ingredients
Scale
- 3 small leeks (washed and cut into 1 inch slices)
- 1 medium sweet potato (peeled and cut into 1 inch cubes)
- 1 onion (peeled and cut into 4 parts)
- 2 garlic cloves (peeled and cut in half)
- 1 bouillon cube
- 1 liter of cold water
- 1 tbsp of salt
- 1 tsp of Ras El Hanout spice mix
- 1/4 tsp of hot chili flakes
- 1 tsp of pepper
- 5cl of liquid cream
- 2 tbsp of grated cheese (we used Emmental cheese, but you could grate your favorite cheese on top)
Instructions
- Put the leeks, sweet potato, onion and garlic in a large pot.
- Add the cold water.
- Add salt and bouillon cube and heat on medium heat for 1 hour.
- Mix with a hand mixer.
- Add pepper, ras el hanout and mix.
- Serve with hot chili flakes, cream and grated cheese.
Notes
