We are always looking for a fabulous vegetarian recipe and this is one of our absolute favorites! Hugo and I are both big fans of Indian food. We never miss an opportunity to make and/or taste a delicious curry! Any time we hear of a new Indian restaurant here in Paris that we haven’t tried yet, we always try to check it out as quickly as possible.

We make Indian curries and homemade cheese naan bread regularly for just the two of us and when having friends over. Indian food = cozy comfort to me. We often ate it as a family when I was growing up, in our NYC apartment. It reminds me of cozy nights in when it’s snowing outside!

We recently shared our Palak Paneer recipe with you and promised you that we had some other really tasty Indian recipes on the way! Yay! This is our second Indian recipe : yogurt, cucumber and tomato raita.

This raita is perfectly creamy, while still being healthy, entirely natural and just really good, wholesome, real food. If you are serving your raita with a very spicy dish, it will help to calm the spice and balance the flavors of your meal. If you are serving it with a sweeter or milder dish, it goes along really well too.

You can even serve this raita with carrot or celeri sticks if you are just looking for a quick snack! It is lovely with our yogurt banana lassi smoothie as well.

You all know how much we love to travel and have heard stories about our honeymoon in Thailand, Cambodia and Myanmar. You read about when we went Champagne tasting in Reims and when we trekked across Somme Bay and the amazing pesto recipe that we were able to create as a result! It hasn’t started snowing here in Paris yet this Winter (will we have snow this year?!) but it is very cooooooold and the perfect weather to cozy up with your love and to create your very own Indian feast. We served our raita with our palak paneer, chickpea chana masala, cashew rice, cheese naan and yogurt banana kefir lassi smoothies.

Description

Learn to make these creamy Indian yogurt and cucumber raita.


Ingredients

Scale
  • 1/2 cucumber (​diced)
  • 1 tomato (​diced)
  • ​1 garlic clove (finely chopped)​
  • 250g of greek yogurt
  • 1 tsp of cumin
  • 1/​4​ tsp of hot chili
  • ​2 tbsp of ​fresh ​mint
  • Salt ​and pepper​

Instructions

  1. Pour the yogurt in a bowl.
  2. Add tomato​, cucumber.and garlic.
  3. Add the spices​, mint, salt, pepper​ and mix with a spoon.
  4. ​Serve with naan.​
