Garlic and Oil Pasta (Aglio e Olio)

Garlic and oil pasta is life! There is nothing simpler than this tasty olive oil pasta but this recipe packs such a delicious punch. Make this spaghetti with garlic and oil and you will feel like you are dining in Rome in no time. Make this three mushroom pasta or this Älplermagronen (Swiss Alpine Macaroni) next!

Garlic and oil pasta includes a handful of really simple ingredients. Yup, you guessed it, garlic and oil pasta requires garlic, oil and pasta! But, it’s more than that… It’s an Italian tradition and it’s about to up level your dinner. We also added red chilli flakes for a little spice, pine nuts, a sprinkle of fresh parsley and grated parmesan cheese to make this recipe even more delicious.

Tips to make olive oil pasta

  • To make perfectly al dente pasta, make sure you cook the pasta for one minute less than the time on the box. It will cook for another minute once you add the other ingredients into he frying pan.
  • Using a high quality olive oil will also provide a better meal with maximum flavor.
  • Generously cover with pine nuts because pine nuts are everything.

Make this spaghetti with garlic and oil recipe your own

  • Swap out olive oil for richer and creamier butter to make garlic butter pasta
  • Skip the olive oil and add cream to make creamy garlic pasta
  • Add lemon to make lemon garlic pasta
  • Toss in some parmesan to make garlic parmesan pasta
  • Feel free to top your spaghetti with garlic and oil with your favorite ingredients : chicken, shrimp, spinach, sausage, tomatoes, sun dried tomatoes, asparagus or anything else that you love. The sky is the limit!

We travel to Italy regularly to visit my family there and this is a pasta dish we order when we go out again and again. It is so simple but it will satisfy your pasta craving every time. We can’t get enough! Italian cuisine is known for simple and tasty pasta dishes that use simple ingredients : olive oil, parmesan, good quality salt and pepper… We often like to start the meal with a selection of bruschette and then go from there…

When is spaghetti just right? How do you know it is ready?

If you follow the instructions on the package, and for this recipe cook one minute less than indicated, you will have perfectly cooked al dente spaghetti. It will cook for another minute in the frying pan with the olive oil, garlic, parsley, pine nuts and chilli flakes.

Description

Garlic and oil pasta is a simple, tasty Italian dinner that requires a handful of basic ingredients : spaghetti, olive oil, garlic, pine nuts, parsley and red chilli flakes.


Ingredients

Scale
  • 1/3 lbs of spaghetti
  • 2 cloves of garlic (finely sliced)
  • 1/2 tsp of red pepper flakes
  • 3 tbsp olive oil
  • 2 tsp pine nuts
  • 2 tbsp parsley (chopped)
  • Parmesan (grated)
  • Salt

Instructions

  1. Cook the spaghetti for one minute less than indicated on the package.
  2. (The spaghetti will cook for an extra minute in the frying pan later.)
  3. Meanwhile, heat a tablespoon of olive oil in a large frying pan on low heat.
  4. Add the garlic and red pepper flakes and cook for 2 minutes.
  5. Add the spaghetti.
  6. Add 2 tablespoon of olive oil, pine nuts, parsley and 2 pinches of salt and cook for another minute.
  7. Top with a general helping of parmesan.
  • Prep Time: 2 minutes
