Description
Heavenly French tomato tart is the perfect dinner dish made from puff pastry, heirloom tomatoes, Emmental cheese, chives and mustard.

- 1 shortcrust pastry
- 2 tbsp of mustard
- 1 cup of grated Emmental cheese
- 3 medium heirloom tomatoes (sliced)
- Salt & black pepper to taste
- 2 tbsp of chives
- Olive oil
Instructions
- Preheat oven to 400°F (210°C).
- Line a quiche pan with the puff pastry.
- Make small holes in the pastry using a fork to keep the quiche from swelling as it cooks.
- Top with parchment paper and baking beans.
- Bake for 15 minutes.
- Remove the shortcrust pastry from the oven and remove the baking beans and parchment paper.
- Spread the mustard over the quiche crust.
- Add the grated cheese and sliced tomato.
- Top with 2 tablespoons of grated cheese.
- Season with salt and pepper.
- Bake for 20 minutes.
- Sprinkle chopped chives over the tart before serving.
