- Careful not to overcook the mushrooms!
- You can make your own Italian herbs mix using equal parts dried basil, thyme, hot chili and oregano.
- Use ceramic baking beans to hold the pastry dough in place while you are preheating it.
- Make crustless mushroom quiche by lining a quiche mold with wax paper and pouring the mixture directly in (without the crust).

Ceramic baking beans (also known as pie weights) also make it easier for to pre-bake your pastry crust before adding the quiche filling. These are our favorite!

Description
Quick & simple cheesy mushroom quiche filled with tasty vegetables. All you need is 45 minutes from start to finish.
Ingredients
- 1 pastry dough
- 1 medium red onion (peeled and chopped)
- 1 medium shallot (peeled and chopped)
- 1 medium garlic clove (peeled and sliced)
- 1 tsp of Italian herbs mix
- 1/2 lbs of mushrooms (peeled and chopped)
- 3 eggs
- 1 cup of liquid cream
- 1/3 lbs of cheese (cut in small cubes)
- 2 tbsp of parsley (chopped)
- Salt and pepper
- Olive oil
Instructions
- Preheat oven to 350°F / 175°C.
- Line a tart or quiche mold with the puff pastry.
- Place baking beans on the puff pastry to keep it from rising in the oven.
- Put in the oven and bake for 10/15 minutes.
- Meanwhile, heat olive oil on medium heat.
- Add onion, shallot and à pinch of salt and cook for 4 minutes.
- Add garlic and italian herbs and cook for a minute.
- Add the mushrooms and cook for 4 minutes.
- Mix eggs, cream, cheese, parsley, salt and black pepper in a bowl.
- Remove the puff pastry from the oven and remove the baking beans.
- Pour the egg mixture into the quiche mold.
- Pour the vegetable mixture over the egg mixture in the quiche mold.
- Bake for 10/15 minutes or until the puff pastry is cooked through.
- Serve with green salad (our favorite is arugula!).
