This French mushroom quiche is about to become your go-to quiche recipes! This cheesy mushroom quiche is filled with vegetables : red onion, shallot, garlic and mushrooms, Italian herbs, eggs, emmental cheese, parsley and olive oil, in a pastry dough. This tasty recipe only takes 45 minutes to make from start to finish. Here in France we love making quiche as a quick, simple and healthy dinner. Once you’ve made this cheesy mushroom quiche, make sure you come back to try two more we make on repeat in our home : this pumpkin goat cheese quiche and our goat cheese zucchini quiche. The whole family will love them!

One of the best things about this quiche is how tasty it is reheated the next day. You can enjoy it for dinner and again for lunch the next day or prepare it in advance if you’re having friends over for dinner.

Tips to make the perfect mushroom quiche

  • Careful not to overcook the mushrooms!
  • You can make your own Italian herbs mix using equal parts dried basil, thyme, hot chili and oregano.
  • Use ceramic baking beans to hold the pastry dough in place while you are preheating it.
  • Make crustless mushroom quiche by lining a quiche mold with wax paper and pouring the mixture directly in (without the crust).

We make this quiche regularly and have made it for friends several times and it’s always a favorite dish! We serve it with a side salad and a dash of our French vinaigrette. If you are a mushroom lover, then make sure you stop by to try our decadent Italian 3 mushroom pasta and French pumpkin mushroom bowls with brown rice (healthy + naturally vegan too). Part of the fun of making these dishes for us is being able to shop for mushrooms in our local Parisian markets.

Add your own twist to this French mushroom quiche

  • You can swap out the mushrooms and replace with asparagus to make a cheesy asparagus quiche.
  • You can swap out the mushrooms and replace with broccoli to make a cheesy broccoli quiche.
  • Rather than serving this French mushroom quiche for dinner, cut it up into smaller pieces and serve with cocktails the next time you have friends over. We’ve served this quiche with our Kir Breton cocktails in the past.

Ceramic baking beans (also known as pie weights) also make it easier for to pre-bake your pastry crust before adding the quiche filling. These are our favorite!

This cheesy mushroom quiche is a combination of mouthwatering ingredients : pastry dough, red onion, shallot, garlic, Italian herbs, mushrooms, eggs, emmental cheese, parsley and olive oil.

Description

Quick & simple cheesy mushroom quiche filled with tasty vegetables. All you need is 45 minutes from start to finish.


Ingredients

Scale
  • 1 pastry dough
  • 1 medium red onion (peeled and chopped)
  • 1 medium shallot (peeled and chopped)
  • 1 medium garlic clove (peeled and sliced)
  • 1 tsp of Italian herbs mix
  • 1/2 lbs of mushrooms (peeled and chopped)
  • 3 eggs
  • 1 cup of liquid cream
  • 1/3 lbs of cheese (cut in small cubes)
  • 2 tbsp of parsley (chopped)
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat oven to 350°F / 175°C.
  2. Line a tart or quiche mold with the puff pastry.
  3. Place baking beans on the puff pastry to keep it from rising in the oven.
  4. Put in the oven and bake for 10/15 minutes.
  5. Meanwhile, heat olive oil on medium heat.
  6. Add onion, shallot and à pinch of salt and cook for 4 minutes.
  7. Add garlic and italian herbs and cook for a minute.
  8. Add the mushrooms and cook for 4 minutes.
  9. Mix eggs, cream, cheese, parsley, salt and black pepper in a bowl.
  10. Remove the puff pastry from the oven and remove the baking beans.
  11. Pour the egg mixture into the quiche mold.
  12. Pour the vegetable mixture over the egg mixture in the quiche mold.
  13. Bake for 10/15 minutes or until the puff pastry is cooked through.
  14. Serve with green salad (our favorite is arugula!).

Notes

We used our Le Creuset ceramic quiche dish to bake the quiche.
We used ceramic baking beans (or pie weights) to hold the pastry dough in place while pre-baking before adding the quiche filling.
