Flammekueche (Alsatian Pizza)

Flammekueche is a traditional Alsatian pizza with flour, dry yeast, sugar, salted butter, salt, cream cheese, sour cream, nutmeg, lardons and onion. The Alsace region is known for it’s Christmas markets, homemade breads, gingerbreads and flammekueche.

  • Flour
  • Dry yeast
  • Sugar
  • Salted butter
  • Salt.
  • Cream cheese
  • Sour cream
  • Nutmeg
  • Organic lardons (chopped bacon)
  • Onion

A couple of years ago, we had the pleasure of visiting Hugo’s aunt and uncle in Strasbourg. Strasbourg is such a magical city and if you have the chance to go, we definitely recommend trying to go during the holiday season when the entire city transforms into a magical Winter wonderland. When you do go, make sure you try the traditional Alsatian pizza, or flammekueche, also known as a tarte flambée.

It is hard to find a good Alsatian pizza outside of Alsace, and so much more fun to make it at home anyway. You will be able to make it at home and feel like you are in Alsace right away too. It’s easy to make your own dough and top it off with a handful of tasty ingredients you can find at your local grocery store or order online.

  • We always use organic bacon. If you are looking for organic bacon, we love the clean, organic meats offered by Butcher Box.

There are several delicious Alsatian pizza variations

  • Gratinière : with gruyère cheese
  • Forestière : with mushrooms on top
  • Munster : with munster cheese
  • Sweet : tops with apples and cinnamon, or sometimes blueberries, and flambée with Calvados (a delicious liquor)

What does flammekueche mean?

Literally, flammekueche or tarte flambée means “pie baked in flames”.

I have to admit, I don’t find it easy to pronounce flammekueche! It’s literally pronounced flam-kuche.

Description

Flammekueche is a traditional Alsatian pizza with flour, dry yeast, sugar, salted butter, salt, cream cheese, sour cream, nutmeg, lardons and onion that makes for an easy and delicious homemade pizza dinner recipe!


Ingredients

For the dough

2.5 cups (300g) of flour
1 tsp of dry yeast
1 tsp of sugar
3/4 cup of lukewarm water
1 tbsp + 1 tsp of softened salted butter
1/2 tsp of salt

For the topping

1 cup +1/3 cup (300g) of cream cheese
1/3 cup (80g) of sour cream
1 tsp of salt
A pinch of nutmeg
0.33 lbs. (150g) of lardons (or diced bacon)
2 medium onions (thinly sliced)

To serve

2 handfuls of arugula


Instructions

For the dough

  1. Mix 1 tablespoon of flour, yeast, sugar and a tablespoon of lukewarm water together.
  2. Set aside for 10 minutes, until bubbles appear.
  3. Pour the rest of the flour, salt and the remaining water into the bowl of your stand mixer.
  4. Mix for a minute (using the dough hook), then add the yeast.
  5. Mix until the dough forms a ball.
  6. Add the butter and mix until the butter is absorbed.
  7. Cover with a clean dish towel and put in a lukewarm place.
  8. Leave to rest for 4 hours.

For the topping

  1. Remove the dough from the oven.
  2. Remove the oven tray.
  3. Preheat the oven to 482°F (250°C).
  4. Roll the dough very thinly with a rolling pin.
  5. Put the dough on the oven tray.
  6. Mix the cream cheese, sour cream, salt and nutmeg in a bowl.
  7. Spread the mixture onto the dough, to make the flammekueche base.
  8. Heat a frying pan on high heat.
  9. Add the lardons and onion and cook for 5 minutes.
  10. Put the lardons and onion on the top of the flammekueche base.
  11. Bake in the oven for 10 minutes.
  12. Serve with arugula.
