Description

Tasty disco fries!


Ingredients

Scale

For the fries

  • 6 medium potatoes
  • 1 tsp of smoked paprika
  • 1 tsp of ginger powder
  • 1 tsp of cumin
  • 1/2 tsp of salt
  • Black pepper 

For the gravy

  • 1.5 tbsp of butter
  • 1 shallot (chopped)
  • 1 garlic clove (crushed)
  • 1.5 tbsp of flour
  • 1 cup of vegetable stock
  • Salt

Toppings

  • 1/2 cup of mozzarella 
  • 1/3 cup of emmental cheese (or cheddar or your fave cheese) 

Instructions

For the fries

  1. Preheat oven to 410°F (210°C).
  2. Peel the potatoes and cut them into fries (of whatever width you choose).
  3. Put them in a large bowl with paprika, ginger, cumin, salt, black pepper and tablespoon of olive oil.
  4. Line the oven tray with parchment paper and put the fries on it.
  5. Bake for 20 minutes (could be a bit more or a bit less based on the with of your fries).
  6. Flip ovvero the fries and bake for another 20 minutes.

For the gravy

  1. Heat the butter in a medium sauce pan on medium heat.
  2. Add the shallot, garlic and a pinch of salt and cook for 3 minutes.
  3. Add the flour and mix with a whisk.
  4. Pour in the stock, little by little, while continuing to whisk. Put aside.

To assemble

  1. Top the fries with the mozzarella and emmental cheese and bake for 5 more minutes.
  2. Serve the fries with the gravy.
