Ingredients

For the fries
- 6 medium potatoes
- 1 tsp of smoked paprika
- 1 tsp of ginger powder
- 1 tsp of cumin
- 1/2 tsp of salt
- Black pepper
For the gravy
- 1.5 tbsp of butter
- 1 shallot (chopped)
- 1 garlic clove (crushed)
- 1.5 tbsp of flour
- 1 cup of vegetable stock
- Salt
Toppings
- 1/2 cup of mozzarella
- 1/3 cup of emmental cheese (or cheddar or your fave cheese)
Instructions
For the fries
- Preheat oven to 410°F (210°C).
- Peel the potatoes and cut them into fries (of whatever width you choose).
- Put them in a large bowl with paprika, ginger, cumin, salt, black pepper and tablespoon of olive oil.
- Line the oven tray with parchment paper and put the fries on it.
- Bake for 20 minutes (could be a bit more or a bit less based on the with of your fries).
- Flip ovvero the fries and bake for another 20 minutes.
For the gravy
- Heat the butter in a medium sauce pan on medium heat.
- Add the shallot, garlic and a pinch of salt and cook for 3 minutes.
- Add the flour and mix with a whisk.
- Pour in the stock, little by little, while continuing to whisk. Put aside.
To assemble
- Top the fries with the mozzarella and emmental cheese and bake for 5 more minutes.
- Serve the fries with the gravy.
