Disco Fries

These disco fries are a healthier, oven baked version, of a cheesy classic. These fries are loaded with mozzarella and Emmental cheese and homemade gravy, then topped with some chopped parsley for extra flavor and a little color.

What are disco fries?

Disco fries are the US equivalent to Canadian poutine. They are popular in New Jersey and something that I first tried when visiting friends in New Jersey several years ago.

Why are they called “disco fries”?

The name comes from the idea that they are the perfect treat when you’ve been out dancing and are starving at 2am.

To make homemade gravy fries you will need

  • Medium potatoes
  • Smoked paprika
  • Powdered ginger
  • Cumin
  • Butter
  • Shallot (chopped)
  • Whole garlic clove (crushed)
  • Flour
  • Vegetable stock
  • Mozzarella
  • Emmental cheese (or Swiss cheese or your fave cheese)

How to make disco fries, step by step

How to make the French fries

You could use frozen fries for this recipe, but we prefer to make our own – they are just more delicious and really not that complicated to make! They are also healthier when they are homemade.

  • Step 1 – Preheat oven to 410°F (210°C).
  • Step 2 – Peel the potatoes and cut them into fries (of whatever width you choose).
  • Step 3 – Put them in a large bowl with paprika, ginger, cumin, salt, black pepper and a tablespoon of olive oil.
  • Step 4 – Line the oven tray with parchment paper and put the fries on it.
  • Step 5 – Bake for 20 minutes (could be a bit more or a bit less based on the width of your fries).
  • Step 6 – Flip over the fries and bake for another 20 more minutes.

How to make the gravy

The gravy is simple to make too.

Meanwhile, prepare the gravy.

  • Step 7 – Heat the butter in a medium sauce pan on medium heat.
  • Step 8 – Add the shallot, garlic and a pinch of salt and cook for 3 minutes.
  • Step 9 – Add the flour and mix with a whisk.
  • Step 10 – Pour in the stock, little by little, while continuing to whisk. Put aside.

To assemble

  • Step 11 – Top the fries with the mozzarella and emmental cheese and bake for 5 more minutes.
  • Step 12 – Serve the fries with the gravy.

The difference between disco fries and poutine

Although disco fries and poutine are similar, there is one main difference, and that is the cheese that is used in the recipe!

To make disco fries, you will need mozzarella, whereas poutine is made with cheese curds.

What are cheese curds? you ask… They are moist pieces of curdled milk. They are sometimes also called “squeaky cheese”.

Tasty disco fries!


Ingredients

For the fries

  • 6 medium potatoes
  • 1 tsp of smoked paprika
  • 1 tsp of ginger powder
  • 1 tsp of cumin
  • 1/2 tsp of salt
  • Black pepper 

For the gravy

  • 1.5 tbsp of butter
  • 1 shallot (chopped)
  • 1 garlic clove (crushed)
  • 1.5 tbsp of flour
  • 1 cup of vegetable stock
  • Salt

Toppings

  • 1/2 cup of mozzarella 
  • 1/3 cup of emmental cheese (or cheddar or your fave cheese) 

Instructions

For the fries

  1. Preheat oven to 410°F (210°C).

  6. Flip ovvero the fries and bake for another 20 minutes.

For the gravy

  2. Add the shallot, garlic and a pinch of salt and cook for 3 minutes.
  3. Add the flour and mix with a whisk.
  4. Pour in the stock, little by little, while continuing to whisk. Put aside.

To assemble

  1. Top the fries with the mozzarella and emmental cheese and bake for 5 more minutes.
  2. Serve the fries with the gravy.
