Description
Simple and delicious coriander pesto to spice up any pasta dish!
Ingredients

- 20g of fresh coriander (roughly chopped)
- 10g of fresh parsley (roughly chopped)
- 15g of pine nuts
- 30g of grated Parmesan cheese
- ½ inch of fresh ginger (finely chopped)
- 2 garlic cloves (finely chopped)
- 8cl of olive oil
- 1 pinch of chili pepper
- 1 pinch of salt
- 1 pinch of pepper
Instructions
- Mix all the pesto ingredients together in your food processor. If the mixture is too dry, pour more olive oil and mix again.
- Prepare pasta according to instructions.
- Heat coriander pesto in a frying pan for 1-2 minutes and add the pasta to the sauce. Stir for another minute and serve warm.
