The combination of carrot puree and coconut milk create a really smooth texture. It perfectly complements the slightly spicy kick of the soup. Coconut curry soup tips :
- We used yellow curry powder for this recipe. You could also use a green or red Thai curry paste instead.
- We recommend using a high quality coarse sea salt which adds flavor.
- The creaminess of this soup pairs really well with a whole wheat bread.
- You could replace the carrots in this recipe with potatoes, sweet potatoes or pumpkin.
- You could add some protein in the form of chicken or fish if you like.
Add your own twist to this carrot coconut curry soup :
- Top with organic toasted sesame seeds to add an extra vitamin boost and a little crunch.
- Drizzle with some tasty organic sesame oil.

You will need a hand mixer (aka. an immersion mixer) for this recipe. We love the KitchenAid hand mixer. It is sturdy and gets the job done (it’s also really cute and matches the rest of our KitchenAid kitchen appliances and Le Creuset cookware in red cerise).
For your extra dose of vitamins and a tasty crunch, we recommend adding organic Kevala sesame seeds on top.
If you want to drizzle sesame oil over your soup, we love this organic Clearspring sesame oil.

Carrot Coconut Curry Soup Recipe
Coconut curry soup is a mixture of so many hearty and healthy ingredients : carrot, celery, coconut milk, curry powder, garlic, cumin, spicy powder and cilantro.

Description
Make this cozy coconut curry soup this Winter!
Ingredients
- 1.5 lbs of carrots peeled and sliced
- 1 stalk of celery peeled and chopped
- 1 clove of garlic
- 1 tsp of cumin powder
- 2 cups 40cl of coconut milk
- 1 inch of ginger peeled and grated
- 1 red chili pepper sliced
- A tbsp of fresh cilantro chopped
- Salt and pepper
Instructions
- Put the carrots, celery, garlic, cumin and a teaspoon of coarse sea salt in a large pot.
- Fill the pot with enough cold water to cover the mixture.
- Heat on high heat for 30 minutes.
- Remove from heat.
- Pour in the coconut milk.
- Add the ginger and half a teaspoon of ground black pepper.
- Mix with a hand blender.
- Heat until it boils.
- Top with spicy red pepper and cilantro to serve.
- Prep Time: 15 mins
- Cook Time: 35 mins
