Chorizo Spaghetti

Description

Chorizo spaghetti is simple, creamy and flavorful. Wondering what to do with a box of spaghetti? Toss in some chorizo, onion, garlic, pine nut and fresh chives and sprinkle with a generous helping of grated parmesan. Although simple, this dish is memorable! Make it for a special date night or weekend treat.


Ingredients

  • 1/2 lb of spaghetti
  • 1/4 lb of chorizo (sliced thinly)
  • 1 small yellow onion (chopped)
  • 1 clove of garlic (chopped)
  • 1 tbsp of pine nuts
  • 1 tbsp of chives (chopped)
  • 2 tbsp of parmesan (grated)
  • Sea salt and ground black pepper to taste

Instructions

  1. Cook the spaghetti for one minute less than indicated on the package. (The spaghetti will cook for an extra minute in the frying pan at the end.)
  2. Meanwhile, heat the chorizo in a large frying pan on medium heat for 5 minutes.
  3. Remove the chorizo from the pan and put aside.
  4. Add the onion and cook for 3 minutes.
  5. Add a pinch of salt.
  6. Add the garlic and cook for another minute.
  7. Pour in a ladle of spaghetti water.
  8. Strain the spaghetti.
  9. Toss the spaghetti into the frying pan.
  10. Add the pine nuts and chives and cook for a minute.
  11. Sprinkle with ground black pepper and serve with a generous amount of parmesan.
