Description
Chorizo spaghetti is simple, creamy and flavorful. Wondering what to do with a box of spaghetti? Toss in some chorizo, onion, garlic, pine nut and fresh chives and sprinkle with a generous helping of grated parmesan. Although simple, this dish is memorable! Make it for a special date night or weekend treat.

- 1/2 lb of spaghetti
- 1/4 lb of chorizo (sliced thinly)
- 1 small yellow onion (chopped)
- 1 clove of garlic (chopped)
- 1 tbsp of pine nuts
- 1 tbsp of chives (chopped)
- 2 tbsp of parmesan (grated)
- Sea salt and ground black pepper to taste
Instructions
- Cook the spaghetti for one minute less than indicated on the package. (The spaghetti will cook for an extra minute in the frying pan at the end.)
- Meanwhile, heat the chorizo in a large frying pan on medium heat for 5 minutes.
- Remove the chorizo from the pan and put aside.
- Add the onion and cook for 3 minutes.
- Add a pinch of salt.
- Add the garlic and cook for another minute.
- Pour in a ladle of spaghetti water.
- Strain the spaghetti.
- Toss the spaghetti into the frying pan.
- Add the pine nuts and chives and cook for a minute.
- Sprinkle with ground black pepper and serve with a generous amount of parmesan.
