Chorizo Spaghetti

Jump to Recipe·Print Recipe

Chorizo Spaghetti is simple, creamy and flavorful. Wondering what to do with a box of spaghetti? Toss in some chorizo, onion, garlic, pine nuts and fresh chives and sprinkle with a generous helping of grated parmesan. Although simple, this dish is memorable! Make it for a special date night or weekend treat. Why not start the meal with our simple Italian bruschette?

How to Make Chorizo Spaghetti

Ready to make some mouthwatering comfort food? Ok, let’s do it!

  • Step 1 – Cook the spaghetti for one minute less than indicated on the package. (The spaghetti will cook for an extra minute in the frying pan at the end.)
  • Step 2 – Meanwhile, heat the chorizo in a large frying pan on medium heat for 5 minutes.
  • Step 3 – Remove the chorizo from the pan and put aside.
  • Step 4 – Add the onion and cook for 3 minutes.
  • Step 5 – Add a pinch of salt.
  • Step 6 – Add the garlic and cook for another minute.
  • Step 7 – Pour in a ladle of spaghetti water.
  • Step 8 – Strain the spaghetti.
  • Step 9 – Toss the spaghetti into the frying pan.
  • Step 10 – Add the pine nuts and chives and cook for a minute.
  • Step 11 – Sprinkle with ground black pepper and serve with a generous amount of parmesan.

Tips to Make Chorizo Spaghetti

  • Don’t overcook the spaghetti! The key to perfect spaghetti every time is to cook for one minute less than indicated on the box and to toss it into the mixture in the frying pan at the end to cook for one more minute with the toppings/rest of the ingredients. If you cook according to the time on the box and then cook for extra time at the end, the pasta will be overcooked and too soft. We want try Italian al dente pasta here, friends!
  • Use fresh herbs! Although you can use dried herbs to flavor your pasta dishes, fresh herbs always elevate your dishes in my opinion. Use fresh chives if you can.

Make This Chorizo Spaghetti Your Own

  • Add more veggies! You can toss in some broccoli or asparagus to add more vegetables to this dish.
  • Add a little heat! Chorizo is already spicy but you could make this dish even spicier by adding some hot pepper.
