Description
These date cookies, inspired by some of our favorite Mediterranean desserts, are chewy, buttery, naturally sweet and decadent cookies.
Ingredients
1 stick of salted butter
1/4 cup of cane sugar
1/4 cup of brown sugar
1 egg
1/2 cup of all purpose flour
1/2 cup of whole wheat flour
1.5 tsp of baking powder
1/2 cup of date paste
Instructions
Heat the butter in a medium pan on low heat until it melts.
Remove from heat and leave to cool.
Mix the sugars in the bowl of your stand mixer using the paddle attachment.
Pour in the butter and mix until creamy.
Add the egg and mix for a minute to incorporate.
Mix the flours with the baking powder.
Add the flours and mix to make the cookie dough.
Add the date paste and mix to incorporate.
Put in the fridge for 30 minutes.
Preheat the oven to 350°F (180°C).
Line a baking tray with parchment paper.
Roll the dough into 9 balls (1 inch diameter each).
Put them on the tray.
Use a fork to press each ball of dough slowly.
Bake for 10 to 11 minutes.
Remove from oven and leave to cool on the tray.
Repeat the last 3 steps for the rest of the dough.
