Chewy Date Cookies

These date cookies, inspired by some of our favorite Mediterranean desserts, are chewy, buttery, naturally sweet and decadent cookies. They are easy to make and delicious on their own or dipped in a glass of milk. If you love cookies, make these almond butter cookies and French meringue cookies next!

  • Salted butter is a magical ingredient that makes everything better.
  • Cane sugar
  • Brown sugar
  • Egg – fresh and preferably organic
  • Flour
  • Whole wheat flour 
  • Baking powder will make date cookies rise
  • Date paste – (buy store-bought or make your own by mixing approximately 20 whole medium-sized dates)

When I think of date cookies, I always think of my grandma. When I was little, she used to send my sister and I boxes of homemade cookies from Michigan to NYC where we grew up. The date cookies were always my absolute favorites!

These are slightly different than she used to make them – hers had a delightfully chewy date swirl – these have the flavor of a maamoul cookie, or a date filled cookie.

Tips to make these date cookies :

  • The key to chewy cookies is to not overcook!
  • Serve with French hot cocoa for the perfect Winter snack.

Make these date cookies your own by mixing things up a little :

Feel free to add in some :

  • Chocolate chips to make chocolate date cookies.
  • Raisins to add a little extra sweetness.
  • Nuts : chopped pecans, almonds or walnuts would be tasty in these cookies.

Description

These date cookies, inspired by some of our favorite Mediterranean desserts, are chewy, buttery, naturally sweet and decadent cookies.


Ingredients

Scale

1 stick of salted butter
1/4 cup of cane sugar
1/4 cup of brown sugar
1 egg
1/2 cup of all purpose flour
1/2 cup of whole wheat flour
1.5 tsp of baking powder
1/2 cup of date paste


Instructions

Heat the butter in a medium pan on low heat until it melts.
Remove from heat and leave to cool.
Mix the sugars in the bowl of your stand mixer using the paddle attachment.
Pour in the butter and mix until creamy.
Add the egg and mix for a minute to incorporate.
Mix the flours with the baking powder.
Add the flours and mix to make the cookie dough.
Add the date paste and mix to incorporate.
Put in the fridge for 30 minutes.
Preheat the oven to 350°F (180°C).
Line a baking tray with parchment paper.
Roll the dough into 9 balls (1 inch diameter each).
Put them on the tray.
Use a fork to press each ball of dough slowly.
Bake for 10 to 11 minutes.
Remove from oven and leave to cool on the tray.
Repeat the last 3 steps for the rest of the dough.

  • Prep Time: 20 minutes
  • Cook Time: 22 minutes
