Cajun brown rice and beans

Description

Learn to make this healthy and flavorful Cajun-inspired brown rice and beans.


Ingredients

Scale
  • 1 onion (chopped)
  • 2 garlic (minced)
  • 2 dry chili peppers
  • 1 cup of brown rice
  • 3 cups of water
  • 1 tsp of paprika
  • 1 tsp of cumin
  • 1 cup of tomato sauce
  • 1 tbsp of apple cider vinegar
  • 1 tbsp of bourbon
  • 1 tsp of mixed cajun spices
  • 3 tsp of sugar
  • 1 can of red beans
  • Salt and pepper to taste
  • Olive oil
  • 1/4 cup of parsley
  • 2 cups of mache

Instructions

  1. Heat olive oil in a pan on medium heat.
  2. Add cajun spices and cook for a minute.
  3. Pour the rice into the pan, cook for 2 minutes.
  4. Pour in the water and cover.
  5. Turn the heat to very low once the the water starts to boil.
  6. Cook for 45 minutes or until the rice is cooked through.
  7. Meanwhile, drain and wash the red beans.
  8. Heat olive oil in a casserole on low heat.
  9. Add onion, garlic and chili peppers, cook for 6 minutes.
  10. Add paprika and cumin and cook for 1 minute.
  11. Add sugar and cook until the mixture begins to caramelize.
  12. Add the vinegar and cook until absorbed.
  13. Add the bourbon (careful of your eyebrows – you will create a “flambée” with this step!). Cook for another 2 minutes.
  14. Add the red beans, mix and cook for 2 minutes.
  15. Add the tomato sauce, cover and cook slowly for 20 minutes.
  16. Serve the rice and beans with mache. Sprinkle with parsley.
