Avocado deviled eggs

Avocado deviled eggs are a gourmet home cook’s dream! They are easy to pull together, look beautiful as an appetizer when having friends over and are so tasty. These avocado deviled eggs without mayo are bursting with avocado, fresh cilantro, lime, red onion, fresh ginger, tomato, cumin, cilantro seeds, hot chili and paprika. In addition to these avocado stuffed eggs, we make these sardine rillettes deviled eggs on the regular in our home.

  • Fresh cilantro
  • Lime
  • Red onion
  • Fresh ginger

  • Hot chili (powdered)

We first started making deviled eggs when we spent 2 weeks on sailboat, sailing from the South of France, to Italy, to Corsica and back again. While sailing, we wanted easy and delicious gourmet recipes we could enjoy on board. Deviled eggs were the perfect choice! We started making these sardine rillettes deviled eggs during that trip and make them regularly to enjoy with a glass of rosé at home and when we have friends over for dinner.

Description

Make these show stopping deviled eggs for your next dinner party! This tasty appetizer is bursting with avocado, cilantro, lime, ginger, red onion, tomato, cumin, cilantro seeds, hot chili and paprika!


Ingredients

Scale

4 eggs
1 large avocado
1/4 cup of cilantro (chopped)
Juice of a 1/2 lime
1/2 inch of ginger (grated)
1 little red onion (chopped)
1 little tomato (cubed)
½ tsp of cumin
½ tsp of cilantro seeds powdered
½ tsp of hot chili
½ tsp of paprika
Salt and ground black pepper to taste


Instructions

Fill a small pan with water and heat on high heat.
When the water begins to boil, add the eggs and cook for 9 minutes.
Remove the eggs from the pan and put them in a bowl of cold water. Leave to cool.
Meanwhile, prepare the avocado filling.
Mix in the cilantro, lime, ginger, red onion, cumin, cilantro seeds, hot chili, a pinch of salt and ground black pepper.
Remove the eggshells and cut the eggs in half lengthwise. Remove the egg yolks.
Mix 2 hard-boiled egg yolks into the avocado mixture.
Grate the remaining 2 egg yolks over the deviled eggs.
Sprinkle the paprika on the top.

    My mother in law has made avocado deviled eggs a couple of times and I love them. I really love your version and all the options you have for different deviled eggs! That’s quite a collection!
