Refreshing coriander pesto recipe

This coriander pesto is magic! It will magically transform any pasta into a yummy and unique lunch or dinner dish that you can share with family and friends! It is flavorful, easy to make and a beautiful deep green color. We love classic (basil) pesto and thought it would be fun to try something similar but different. Here is the result!

We have been thinking, talking and sharing about our trip to Venice these past 2 weeks. Our initial plan was to write about Venice, our adventures and the recipes we were inspired to create based on our trip for one week, however, one week turned into two… and we’re still going strong. I mean, honestly, can you ever stop thinking, talking and sharing about Venice? It is such a beautiful place, so full of magic, romance and beauty! There are so many beautiful places and things to see and so many wonderful and delicious things to taste! If you haven’t been there yet, we definitely recommend you add it to your bucketlist.

While we were in Venice we ate delicious pizza, pastries, gelato, seafood pasta and pesto. The best place to get authentic pesto in Italy is the Cinque Terre region along the coast (more on that soon so stick around for when we talk about our sailing trip to Italy, Corsica and the South of France), however, you can find gorgeous pesto and pasta dishes in Venice as well.

To make this dreamy green sauce that is sure to spice up the simplest of pasta bases, you will need to have fresh coriander, a bit of parsley, pine nuts, grated parmesan, fresh ginger, cloves, olive oil, chili pepper, salt and pepper. You will also need a food processor. Any food processor will work. We love the Kitchenaid appliances (in red!) and we recommend their food processor. One of the things we love most about this recipe is how easy it is to make! Basically, you just throw all of the ingredients together in the food processor!

Description

Simple and delicious coriander pesto to spice up any pasta dish!


Ingredients

Scale
  • 20g of fresh coriander (roughly chopped)
  • 10g of fresh parsley (roughly chopped)
  • 15g of pine nuts
  • 30g of grated Parmesan cheese
  • ½ inch of fresh ginger (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 8cl of olive oil
  • 1 pinch of chili pepper
  • 1 pinch of salt
  • 1 pinch of pepper

Instructions

  1. Mix all the pesto ingredients together in your food processor. If the mixture is too dry, pour more olive oil and mix again.
  2. Prepare pasta according to instructions.
  3. Heat coriander pesto in a frying pan for 1-2 minutes and add the pasta to the sauce. Stir for another minute and serve warm.
